Your pizza took longer to prepare than your entire evening out.
Our dough ferments for a minimum of 48 hours before it ever sees the oven. That's two days of cold fermentation, developing flavour, building structure, creating that cloud-like crust you can't stop thinking about.

We see dough as science. This is what we mean.
And now it's time for pizza, all pinkster weekend long.

Only a few more days till our oven is lighting up again at OS West (22-05 to be exact).

At OS West drinks are the same as usual, but since our oven needed a break (we had a fire), we’re serving pizza in pala from a temporary Stefano Ferrara wood oven. Back on the 22nd of May with our Neapolitan pizza’s. But in the meantime same antipasti and homemade dolci.

The oven at OS West needed a break. We didn’t.

From May 22nd we’re back to our Neapolitan pizzas but until then, we’re serving pizza in pala from a temporary Stefano Ferrara wood oven. Same love. Different shape.
Joined by our antipasti and homemade dolci. Because some things never change.
