I got a little too excited with the grilled peppers for our BBQ side dish.
So naturally, I ended up with enough leftovers to feed a small village.
The solution? Turn them into a pasta sauce.
Blended with a generous amount of the good olive oil, tossed with lumache pasta, finished with goat cheese and honey, then topped with smoked salted almonds that should honestly be illegal because you’ll eat half the bag before the pasta even hits the plate.
Also, shoutout to our pasta boiler.
Absolute game changer.
Not only can we cook different pasta shapes at the same time and make enough pasta for a crowd, but it also frees up valuable space on the stove.
No giant pot of boiling water taking over an induction zone or burner for hours.
Whether we’re cooking at home or feeding a small army at an event, it has made our lives ridiculously easier.
And yes, you can absolutely have one at home too.
Leftover peppers never had it this good.
