Hey everyone, here’s the 4-legged creature called Us!
Saying hi 👋🏽from the woods and hills.
There’s a lot going on this spring, many things under construction: Roos on raisedbeds, new nightcoop for the chicks, renovating and decorating cabins, a greenhouse in the frontyard and then the kids and cooking at wich I love. I just cannot seem to keep up with everything growing! Or are we the same pace, nature and I..?
Sweet & steady René is on the construction place most of the time: a beautiful home flows from his hands where there used to be a ramshackle shed. But also he’s helping me with building the little greenhouse and manages constructive adjustments in the cabins, and of course the kids.

August is our deadline and this years’s step is rapid. It will all work out well (‘det kommer at gå bra’ as the Swedes say), but:

*** We are looking for one more investment of €10k to build the kitchen, bathroom and a sauna.

Dear followers,
We left to Sweden for several good reasons (working with being one of them), and now that we’ve been living and working here for six months, we have decided to stay and give shape to our ideals here, in the uplifting Småland scenery.

After a few years of learning and studying our dream is increasing reality: a climate positive regenerative farmstand to live and work on, that we can share with you.
There will be a few hectares of land for carbon-sequestering agroforestry, a natural swimmingpond, a number of outbuildings to house people that help on the land and for holidays, a no-dig vegetable garden and a workshop.

We are excitedly waiting for the day our big little farm dreams can take shape.
You can be of great help in this.

We are looking for people who are willing to support us with a private loan, to complete the starting capital that is needed for the purchase of this property.

About big dreams and small solutions.

Two of many reasons we chose to leave citylife behind and flee to the countryside, is because nature was calling 🌳☀️🌳 and because we believe that small-scale land use is a healthy and happy solution to the stress that we, urban life and society have found ourselves in.
Unfortunately it took a pandemic crisis to be brave enough to take this step, and go with the flow of urgent change, allthough we knew it long before!
We ended up at Stedsans this summer.
Their holistic way of stewarding and fostering the land inspires us daily to follow the unpaved path towards a healthier life & planet.
I’m convinced that big dreams need small & slow solutions. It’s a paradigm shift that we are all part of.

Agro-ecologist Peter M. Rosset clearly shows the added value of small scale farming in a policy brief he wrote in 1999:
‘The benefits of small farms extend beyond the economic sphere. Whereas large, industrial-style farms impose a scorched-earth mentality on resource management — no trees, no wildlife, endless monocultures — small farmers can be very effective stewards of natural resources and the soil. To begin with, small farmers utilize a broad array of resources and have a vested interest in their sustainability. At the same time, their farming systems are diverse, incorporating and preserving significant functional biodiversity within the farm. By preserving biodiversity, open space and trees, and by reducing land degradation, small farms provide valuable ecosystem services to the larger society.

If we are concerned about food production, small farms are more productive. If our concern is efficiency, they are more efficient. If our concern is poverty, land reform to create a small farm economy offers a clear solution. The small farm model is also the surest route to broad-based economic development. If the loss of biodiversity or the sustainability of agriculture concern us, small farms offer a crucial part of the solution.’

Couleur locale, ‘terroir’, or ‘stedsans’ (‘stedsans’ means sense of location in Danish): the colour and taste nature gives you in a specific time & place, pulls you to the awareness of the here & now with a physical experience that I just love so much.

Working with food always needs this awareness and focus, that forces you to be authentic. Maybe that is why I like being a chef. ☺️

Light your fire, but take it slow.

Burning wood is controversial because of air pollution. But we don't just ban crackling fires just like that, do we? Because lighting a fire triggers unstoppable primal feelings in us.

Fire plays a major role in ceremonial dances and celebrations in many cultures. And every culture has its myths and legends about it.
The most famous story comes from the Greeks. They said that the god Prometheus stole fire from Zeus and smuggled it secretly to man.
The Inuit have the same kind of story, about fire as a stolen gift to humanity. A rabbit would have managed to peck fire from the weasels. In a Polynesian myth, it was the coots that imparted the art of fire to humans. With the Cherokee, the spiders did. (Daniel Hume wrote a nice book about fire, where I got this info from).

So hey! Let’s burn a fire now and then, to gather around and to dwell on the elements.

Goodmorning!
René is up early for prepping breakfast with Julia this week. The light is always so nice in the restaurant, especially during dawn or twilight.
The breakfast is served lowkey, with the best ingredients and freshly baked bread, local yoghurt, homemade jams, granola and fresh herb tea (among other things).
This buffet style ensures that the guests can wake up on their own pace, and take it slow.
Since the kids are at school (struggling with learning Swedish in the first place, but also playing and laughing, fiew), I can take it slow this morning as well. I think I go for a small walk to the lake.
When comes home I leave for the harvest and kitchen shift. Looking forward to it!

After a few weeks of working at I feel blessed being part of such a sweet team, working with the freshest products that we harvest right from the permaculture garden.
I mean, we really harvest only two hours before service. Or less, if your name is 😉🌱 And mise en place is done just seconds before plating. You can taste the freshness and the rich soil on which the crop grew, and it tastes so damn good! These mindfully grown products don’t need processing or sauces. Just a sip of the best local raspberry vinegar.
Such a pure and sincere approach to farm-to-table dining. You might say (or sing🎶) ‘I’m in heaven’, but I never have been more ‘on earth’ as I am now.

Halland, Sweden. An adventure full of long awaited wilderness, invigorating woods and quality goods. You can clearly see that the people here are living closer to nature than we did in Amsterdam. Sustainability seems self-evident. In almost every village you can find more than one ‘loppis’ or ‘sparsamhetsbutik’; thrift shops.
And once you enter them, you enter a real treasure-hunt paradise with original Swedish ceramics and pottery, and handmade linen cloths.

When you let go all certanties, and decide to follow your dreams, dreams will come to you and find their way into reality.
One of our recent dreams is living closer to nature, and nurture ourselves and others with slow foods & less goods, whilst restoring soil life. The most pragmatic solution to cure some of the Earth after all we took from her, we thought.

And then, two kindred souls showed up from the woods: and are working their *** off nurturing souls & soil in their magical farm & restaurant in the Swedish woods .
A place that I always use as an example in conversations about our plans and dreams.

We are going to help them out this second half of the season (and also the last part of Mettes pregnancy, as you can see on the 📷 that made last week✨).
So excited to work with these two out there in the Nordic woods. 🌳🔥

Looking forward to this instant adventure with and the kids! We’re off on tuesdaynight.

Bloemen eten doet je goed!
So wie so word ik blij van zomer in de tuin, zoveel eetbare schatten, met de leukste schat die vakantie heeft en gezellig meeproeft.

Zowel de bladeren, bloemen, bloemknoppen als de zaden kunnen in de keuken gebruikt worden. Ze bevorderen de spijsvertering. De farmaceutische industrie gebruikt deze plant in weerstandsverhogende preparaten. Kunnen we goed gebruiken dus, met al die rondwarende virussen.

Eating flowers does good!
Summer in the garden makes me happy, so many edible treasures, with the nicest treasure who is on holiday and who enjoys the fun.

The leaves, flowers, flower buds as well as the seeds can be used in the kitchen. They promote digestion. The pharmaceutical industry uses this plant in resistance-enhancing preparations. So we can use it well, with all those viruses wandering around.
