On October 1, we raise a glass to the rich heritage of sake on World Sake Day.⁠

A Japanese saying goes: Nihonshu wa ryōri wo erabanai “sake does not fight with food.” Its umami-rich character complements the flavours of a dish, which makes it particularly well suited to the delicate flavours of Kaiseki at Yamazato.⁠

We present Narai Sankei, an extraordinary Junmai Daiginjo sake born in the mountains of Nagano, crafted by the revived Suginomori Brewery. Produced in one of Japan’s smallest and highest-altitude breweries, every bottle reflects the purity of the Kiso Valley: ultra-soft mountain water, meticulous small-batch brewing, and a philosophy rooted deeply in place.

Its name, narai, pays homage to Narai-juku, a beautifully preserved Edo-period post town where wooden machiya houses, quiet streets, and centuries of tradition create an atmosphere untouched by time. The brewery stands just steps from this historic road, drawing on the same pristine springs that once refreshed travellers crossing the steep Torii Pass.

With its elegant clarity, refined aroma, and a texture shaped by mountain water of remarkable softness, Narai Sankei captures the spirit of a town where history, craftsmanship, and nature continue to live in harmony.

Yakimono: the grilled course.

Centuries ago, yakimono was a way to honour the humbler trimmings of a meal, served on beautifully decorated vessels to elevate the ordinary into something special. Today, the philosophy remains, but the ingredient speaks for itself.

On the grill: the highest grade of Japanese Wagyu, its marbling melting over the quiet, smokeless heat of binchōtan charcoal. Turned by hand. Seasoned with little more than salt, and a whisper of sanshō pepper.

This is yakimono as it was meant to be: restraint, precision, and respect for the very best nature offers.
