Oaxaca Amsterdam An ancient gastronomic heritage. Eating at OAXACA is like being transported to Mexico. We're talking about nixtamalized corn dough ground on volcanic stone.

Through ancestral techniques, planting a multitude of Mexican produces in our gardens and “milpas”, and cooking with native ingredients. Knowledge of all the chiles, “soasados” and “tatemados”, charcoal-grilled fish, pre-Hispanic “moles” and stews. Guacamole prepared in a “molcajete” and spicy sauces, just as they are made and enjoyed in Mexico.

This vegetarian delight features an exclusive Mexican cheese, crafted specially for us to achieve that perfect melt. We pair it with Huitlacoche—the prized "truffle" of corn—harvested from our very own milpa.

🦀 Taco Ensenada de jaiba co**ha suave

Cooked whole over a high heat until golden brown / crisp on the outside, then we use refried frijoles black beans, pico de gallo & cabbage with chipotle to make the base of the tortilla under the crab flesh, with a slice of avocado to cut through with a bit of richness. ⁣

Each crab produces a different intensity, flavour and colour, but always delicious. We're serving the crab whole to appreciate all morsels as the meat in the claws, head and body are excellent.

🐟 Wild sea bass “a la talla”

A fresh sea bass grilled to perfection by Chef .bagur.i.bagur using the classic Acapulco “pescado a la talla” technique.

Two marinades, two flavors:

Red adobo with dried chiles, tomato, onion.

Green adobo with green chiles, garlic, coriander.

Served in the Mexican tradition with taquitos, tortillas, and frijoles, plus a fresh green tomato and purslane salad from our garden.

A true taste of Mexico, with the finest North Sea seafood.

Try our grilled “plátano macho naco” (roasted plantain): soft, sweet, and meltingly tender.

The charred skin slowly opens on the grill, releasing warm, caramelized flavours. Served with a sweet-and-sour sauce and a drizzle of condensed milk, it’s simple, delicious, and full of flavour.
