Jamaican Pimento is what distinguishes the flavour of Jamaican food from cuisines that use similar ingredients from across the Caribbean, the Americas, West Africa and the Indian subcontinent.
Known more widely as 'allspice', it is used in savoury dishes, sweet dishes, drinks, marinades, medicinal concoctions and condiments in Jamaica because of its intense, multifaceted flavour.
Fun fact - The origin of 'Jerk' cooking made use of pimento in two ways. The original marinade for meats cooked slowly over open heat was a simple mix of Jamaican pimento and Scotch Bonnet chillis to preserve and flavour the meat. The second use was the way pimento tree logs and branches were used between the hot coals and the marinated meat to moderate the heat and infuse it with the signature smokey flavour of Je**ed meat as the logs heat up and smoke.
