WALDORF SALAD

1 teaspoon lemon juice
2 1/2 cups diced apples
1 cup celery, in thin strips about 1-inch long
1/2 cup broken walnuts
1 tablespoon honey
1 dash salt
1/2 cup low-fat vanilla yogurt
2 tablespoons low-fat mayonnaise
crisp lettuce leaf

Drizzle lemon juice over diced apples; toss well.

Mix in celery and walnuts.

Blend together honey, salt, low-fat yogurt and mayonnaise.

Fold into apple mixture; chill.

BUKO/MELON SALAD

3 cups young buko meat, shreded
3 cups melon, grated
1 pack all purpose cream
1 cup condensed milk (or 1 can if you want it sweeter)
1 small bottle nata de coco (optional)

Combine all ingredients until well blended, chill before serving. You can also garnish with grated cheese if you want.

FRESH FRUIT SALAD DRESSING:

1 cup low-fat plain yogurt
2 teaspoons honey
1/4 teaspoon nutmeg
1/4 teaspoon cinnamon
1/4 teaspoon ginger
1/2 teaspoon grated fresh lemon rind

Mix everything and add to any fruits of your desire which are cut into bite sizes. Chill before serving
