Here's a recipe for coconut moimoi using fresh coconut:
# # # Ingredients:
- 2 cups peeled black-eyed beans
- 2 medium fresh coconut (grated)
- 2 medium onion, chopped
- 6 shombo
- 2 scotch bonnet peppers (or to taste)
- 2 tablespoons ground crayfish
- 2 seasoning cubes
- Salt to taste
- 1/2 cup vegetable oil
- Boiled eggs, sliced (optional)
- moimoi leaves for wrapping
# # # Instructions:
1. **Prepare the Beans**:
- Soak the peeled beans in water for about 30 minutes
- Blend the beans and shombo with enough water to form a smooth, thick paste.
2.- Break the coconut and grate the flesh. You can also blend the grated coconut with some water and then strain to extract the coconut milk. Use the milk and some of the grated coconut for added texture and flavor.
3.- Blend the scotch bonnet pepper and onion together until smooth.
4. - Pour the blended mixture of beans and shombo in a bowl .
- Add ground crayfish , stock (if available) and salt to taste.
- Heat the vegetable oil in a pan and allow it to warm up slightly. Add the blended onion and pepper, and cook for about 15 minutes. Then add seasoning, stir, and pour the mixture into the bowl with the beans, crayfish, and shombo, stir very well.
- Adjust the seasoning if needed.
5. **Prepare Wrapping**:
- Cut the moimoi leaves for wrapping.
6. **Wrap and Fill**:
- Place a portion of the moimoi mixture in the center of each wrapping material.
- If using, add a slice of boiled egg in the middle of the mixture.
- Fold the wrapping tightly to prevent leaks.
7. **Steam the Moimoi**:
- Place the wrapped moimoi in a steamer or a large pot with a steam rack.
- Add enough water to the pot to create steam without submerging the moimoi.
- Cover the pot and steam for about 45 minutes to 1 hour, or until the moimoi is firm and cooked through.
8. **Serve**:
- Once cooked, remove the moimoi from the steamer and let it cool slightly.
- Unwrap and serve as a main dish or side dish.
