A Day in My Kitchen | Baking Oatmeal Coconut & Date Cookies For a Customer

Today in the Cuisine Supreme kitchen, I’m preparing a fresh batch of homemade oatmeal coconut and date cookies for a customer order. From blending the oats to mixing the ingredients and baking them to golden perfection, every step is made with care.
These cookies are a perfect balance of crunchy and gooey, flavorful, and perfect with tea, coffee, or as a quick snack.
If you love homemade baked treats, this one is definitely for you!

Ingredients
½ cup date powder
(replaces 80 g sugar)
75–77 g coconut oil (about ⅓ cup)
(replaces 80 g butter)
2 eggs
1 cup + 2 tbsp oat flour
(replaces 110 g wheat flour)
1 tsp baking powder
½–¾ cup damp coconut chaff
(replaces 100 g coconut flakes)
1 tsp vanilla extract
A pinch of salt

I tried Chef Amaka Egemba’s healthy rice idea — riceing/grating carrots and cabbage to sneak in veggies into your rice dish and make every spoonful healthier. But you know me, I had to give it a twist 😋
I added yellow pepper, smoked kpanla, curry leaves and used palm oil for that rich, local flavor. The result? A delicious fusion of nutrition and Naija goodness in one pot! 💛
