I wanted to see how far I could push a few ingredients without forcing them to become something they were not.
I started with mashed banana, heavy cream, pickled garlic, white pepper and just the tiniest drop of vanilla. The idea was not to make a sweet cream. I wanted the banana to bring the softness and sweetness, while the garlic, pepper and pickle brought some sharpness into it.
Then came the fritter.
Milk, yoghurt, fresh acid cheese, charred prawn, Scotch bonnet, egg, apple, oats, brown sugar and a little vanilla. Fried lightly until golden, then back into the pan to dry off that extra oil.
When you put the two together, you get something that starts soft and sweet, then the prawn comes through, followed by the tang from the yoghurt and cheese, a little heat from the Scotch bonnet, the garlic creeping in at the end and that tiny bit of vanilla sitting somewhere in the background.
That was the whole idea.
Sweet, savoury, creamy, tangy, spicy, slightly smoky and a little confusing in the best way.
I was not trying to make something familiar like I said I don’t follow recipes, I cook…
I was also playing in my kitchen, my own playground.
1844 cooks differently.
Would you eat this??
