SAMOSA RECIPE
(Dough method using Samosa cutter)
Ingredients
(Samosa dough)
Flour 4cups
Salt ¼ Teaspoon
Vegetable oil 12 tablespoons
Nutmeg (Optional) ¼ teaspoon
Baking powder ½ teaspoon
Curry masala(Optional) ¼ teaspoon
Lukewarm Warm water 1 cup (add little if necessary)
(Samosa filling)
Minced meat 1 ½ Cups
Carrot 3 medium size
Green beans 1 handful
Green peas ¼ cup
Iris potatoes 3 medium size
Pepper to taste
Salt to taste
Green bell pepper 1 bell
Curry / thyme 1 ½ teaspoons each
Stock cube 3 cubes
Vegetable 2 to 3 cooking spoons
Spring Onion 1 medium sized
Ginger (grated) 1 tablespoon
Garlic powder 2 teaspoons
Procedure
In bowl mix flour, salt, nutmeg, baking powder, curry masala.
Scoop in vegetable oil into flour mixture and mix thoroughly, until bread crumbs like is a achieved
Add warm water to form dough, the dough should not be watery and too thick.
Grease a sizeable bowl and transfer the well mixed dough into it. Cover with towel to rise while you prepare the filling
In a hot pot pour your vegetable oil. Pour in the diced meat and onion. Stir till the meat lose its pink colour
Add magi, thyme, curry, pepper and salt and stir. Place iris potatoes, carrot, and green beans in hot water for 5 minutes. Sieve to drain water.
Add little quantity of water cover to cook for 15 minutes. Add the minced iris potatoes, carrot and green peas this time. Cover to cook for about 8minutes. Add little water if necessary.
Now, add ginger, garlic, spring onion and cook for 3minutes
Add the remaining vegetables, stir and cover to simmer for 5minutes. Stir and mix thoroughly.
On a flat working surface roll some dough.
Place the rolled dough on your samosa cutter: Using a table spoon, place the filling on the dough and press the cutter to cut out samosa. Place on a greased tray for frying or baking.
Repeat step 10 for the remaining dough
Proceed for frying at medium heat and avoid congesting them in the frying pan.
Fry until golden brown and remove from oil into a sieve to drain excess oil
Serve and enjoy.
