Mango Cake Recipe (Soft & Fruity Layer Cake)
Ingredients
For the Sponge Cake
250g all-purpose flour (2 cups)
250g sugar (1¼ cups)
250g butter (1 cup)
4 eggs
2 tsp baking powder
1 tsp vanilla extract
3–4 tbsp milk
Mango Flavor
1–2 ripe mangoes (blended into puree)
Mango Frosting
200g whipping cream (or buttercream)
3–4 tbsp mango puree (strained)
2 tbsp icing sugar (optional for stability)
Method
1. Prepare Cake Batter
Preheat oven to 170°C.
Cream butter and sugar until fluffy.
Add eggs one by one, mixing well.
Add vanilla extract.
Sift flour and baking powder together, then fold into mixture.
Add milk to loosen batter slightly.
2. Bake
Pour into greased pans.
Bake for 25–35 minutes or until a toothpick comes out clean.

Dry fish
Method
Prepare yam
Peel, wash, and cut yam into medium chunks.
Start cooking base
In a pot, add yam, chopped onion, pepper, salt, seasoning cubes, and water/stock.
Cook until yam starts softening (about 10–15 minutes).
Mash slightly
Stir gently to break some yam pieces so it thickens naturally.
Add palm oil
Pour in palm oil and stir carefully.
Let it simmer until yam is fully soft and porridge-like.
Add protein
Add smoked fish, stockfish, or meat.
Add crayfish if using.
Add vegetables
Stir in ugu or spinach and cook for 2–3 minutes.
