TALES: A Time in a City

There are cities that shape us, not just through streets and seasons, but through what we eat, how we eat, and who we become around the table.

This menu is a tribute to such a place, this city of the brave - Ìbàdàn. Inspired by the early life of our Chef, invites you to explore a personal journey through memory, migration, and flavour.

From street-side puff puff at Bodija Market, to smoky oxtail wrapped in reverence for market butchers, from Àkàrà that tastes like Saturday morning to Elégédé soup that flows like the rivers of Ẹlẹ́yẹlẹ́, every course carries a story of childhood, of place, of the many meanings of “home.”

Some dishes are elevated memories. Others are familiar flavours, reimagined. All are an offering, of the city, through the lens a favoured Chef.

The scent of fresh-fried puff puff at the heart of a Market is a memory that never fades, golden, warm, and filled with joy.

I our menu 5th and final course, we reimagine this beloved treat with crisp, spiced puff-puff paired with a luscious dark chocolate ganache, a fiery àtà ròdo jam, and a delicate chocolate tuile. Finished with fresh mint, this final bite is both nostalgic and indulgent.

An ode to the butchers and masters of beef in the City markets, the quiet artists of the market, whose cuts of meat have coloured tables for generations.

In this second option of the 4th course on our menu, we honour their craft with slow-cooked oxtail, smoked in wine, tàtàṣè, and spices until deeply tender. It’s wrapped in a delicate spiced short-crust, served over buttery semolina mash, with a medley of sautéed vegetables and a rich oxtail sauce.

In the rural stretches of the City, chickens roam untethered, woven into the rhythm of village life. We pay tribute to this humble bird with a dish that reimagines its roots.

Tender chicken thighs are carefully stuffed with Ègbo, a herbed white corn porridge cherished in local spots. It’s served with a velvety spiced pumpkin purée and a bold 4-spice tomato sauce, our take on omi ọbẹ̀, rich with palm oil heat and hot peppers, holding memories of a home.

There’s something timeless in the crackle of popcorn, the sweetness of candied coconut, the smoke rising from freshly grilled corn, echoes of street corners and childhood cravings.

Known across continents as tofu, but here simply as wàrà bẹskẹ, a familiar street-side delight and a childhood favourite in this city. For some, it was a treasured snack after school; for others, yet a mystery.

Although not a river, elégédé flows - rich, warm, and golden. In a city defined by the movement of water, from the banks of Ògùpa to the quiet hum of Aṣèjìrẹ́ - this course pays homage to the calm beneath the current.

A second course option from our menu, Elégédé (Pumpkin), revered for its softness and strength, is transformed into a silky soup, layered with spiced roasted chunks, tender chicken, and crisp sweet potato. Basil oil whispers through each spoonful, evoking both garden and depth.

The lake at Eleyele is more than a body of water - it is memory, livelihood, and myth. Feeding the mighty Ògùn River, these waters have long been a source of sustenance for the locals and spiritual reflection for the people of Ibadan.

In this second course option of our menu, we honour a prime specie fished in these waters, Tilapia, crusted in semolina and spices, gently bathed in an aromatic fish broth layered with warmth and freshwater depth. Steamed ugwu leaves, soft yam fondant, and crisp ginger chips complete the harmony.

Àgbálùmọ́, the final course from our menu - Every great tale deserves a greater end. As the African rains begin, the àgbálùmọ́ takes its final bow, ripening with a bittersweet tang that signals both endings and new beginnings. We’ve captured its sweet-sour essence in a vibrant compote, paired with a silky white chocolate crèmeux and a golden, buttery egusi crumb.

The contrast of acidity and sweetness is a symphony of texture and flavor. A closing note both nostalgic and bright - a renewal!
