Here’s a simple and flavorful Ofada sauce (Ayamase) recipe you can try at home:

Ingredients
- 4 green bell peppers
- 2 scotch bonnet peppers (ata rodo)
- 1 large onion (divided)
- ½ cup palm oil
- 1 tablespoon locust beans (iru)
- 2 tablespoons ground crayfish
- 600g assorted meats (beef, tripe, ponmo)
- 2 seasoning cubes
- Salt to taste
- 4 boiled eggs (optional)

Instructions
**Blend the peppers**: Roughly blend the green bell peppers, scotch bonnet, and half the onion. Don’t add water.

**Bleach the palm oil**: Heat the palm oil in a pot until it becomes clear and slightly smoky. Do this in a well-ventilated area.

**Sauté aromatics**: Add the remaining chopped onion and locust beans to the oil. Fry until fragrant.

**Add the pepper mix**: Pour in the blended pepper and fry on medium heat, stirring occasionally, until the oil begins to float to the top (about 15–20 minutes).

**Season and simmer**: Add crayfish, seasoning cubes, and salt. Stir in the pre-cooked assorted meats and let it simmer for another 10–15 minutes.

**Finish with eggs**: Add boiled eggs and simmer for 5 more minutes.

Serve hot with Ofada rice or any rice of your choice. It’s smoky, spicy, and deeply savory—just the way it should be
