🍰 Classic Pound Cake Recipe 🍰

This is one of those timeless cake recipes every baker should have.
Soft, buttery, and perfect for commercial cake supply because it stays fresh for up to 2 weeks!

Here’s how to make it 👇

Ingredients:
250g All-Purpose Flour
250g Margarine
250g Sugar
250g Eggs (about 4 medium)
1 tsp Vanilla Extract
½ tsp Ground Nutmeg
1 tsp Baking Powder
¼ tsp Salt

Steps:
1️⃣ Grease and line your baking pan with parchment paper.

2️⃣ Sift flour, baking powder, and salt into a bowl. Add nutmeg and stir to combine. Set aside

3️⃣ In another bowl, cream margarine, sugar, and vanilla extract together using a mixer until light and fluffy.

4️⃣ Add eggs one at a time, beating well after each addition.

5️⃣ Gradually add the dry ingredients to the creamed mixture. Mix on low speed until well blended and smooth.

6️⃣ Pour the batter into your prepared pan and bake at 170°C (340°F) until golden and a skewer comes out clean.

Allow the cake to cool completely before serving or packaging.

Storage Tip:
This recipe is ideal for commercial cake supply because it can last up to 2 weeks at room temperature. The high sugar content and nutmeg help keep it fresh for longer.

If you prefer to add milk, you can add ¼ cup of liquid milk, but the cake should be consumed within 3–4 days.

COCONUT CANDY RECIPE

🌟 INGREDIENTS
◾ 250g coconut flesh (from 1 medium coconut)
◾ 200g white granulated or caster sugar
◾ 125ml (½ cup) water
◾ A spatula for mixing

🌟 PREPARATION
◾ Break the coconut and remove the shell (if using a whole coconut).

◾ Rinse and grate the coconut flesh, then set aside.

◾ In a pot, combine water and sugar, then boil over medium heat without stirring.

◾ Allow the mixture to thicken and change to a very light brown color. (At this point, reduce the heat to low.)

◾ Add the grated coconut and mix thoroughly with a spatula until well incorporated.

◾ Continue stirring until the mixture turns a deeper brown and feels slightly grainy on your spatula, then turn off the heat. (Be careful at this stage—sugar caramelizes quickly and can burn, ruining the recipe!)

◾ Transfer the coconut candy onto a wide tray or plate, spread it out, and let it cool slightly.

◾ Shape it as desired or leave it to cool completely and harden.

◾ Once set, cut into squares or rectangles.

🌟 TIPS & SUGGESTIONS

◾ For faster hardening, place the candy in the freezer or refrigerator.

◾ Want it extra crunchy? Increase the sugar quantity—but I wouldn’t recommend it. I know some people love their coconut candy super hard!
