HOW TO PRESERVE TOMATOES (I)
Do you know tomatoes? Yes, you do.
Tomatoes are those edible red plant (fruit/vegetable) that we all use to cook stew, our wonderful jollof rice and do other things.
There are times when tomatoes are cheap and there are seasons when they are expensive, many people will like to buy plenty when cheap but then they are confronted with the challenge of preservation. So how do you preserve tomatoes especially in our country where constant electricity is an issue?

There are many methods you can use to preserve your tomatoes but we will mention just two.

METHOD 1:
Take the following steps to preserve your tomatoes.
1. Get RIPE tomatoes from the market (emphasis on RIPE), rinse under running water or in a bowl.
2. Squash the tomatoes and pour in a pot.
3. Add little water and boil until it has boiled very well and the water evaporated.
4. Put off the burner and let it cool a little.
5. Then blend to paste.
6. Pour in a GLASS bottle (like your Mayonaise jar) [You may add little oil on top after pouring in the bottle – just little oil, either vegetable or soya oil.]

There you have your fresh natural tomatoes and it will last until you finish using it [up to a year] with or without refrigeration.
N. B.: Do NOT scoop with iron spoon.

HOW TO PRESERVE TOMATOES (II)
Yesterday, we looked at one method of preserving tomatoes, today we will be looking at another method. This method is good when you don’t like the skin and seed of the tomatoes to show after blending.

METHOD 2:
Take the following steps to preserve your tomatoes.
1. Get RIPE tomatoes from the market (emphasis on RIPE), rinse under running water or in a bowl.
2. Remove the skin and seeds from the tomatoes.
3. Then blend to paste.
4. Pour in a GLASS bottle (like your Mayonaise jar)
5. Put the air-tight jar (that is well closed) in a deep pot filled with water and boil for about 45 – 60 minutes.
6. Leave to cool or transfer to cold water

There you have your fresh natural tomatoes and it will last until you finish using it [up to a year] with or without refrigeration.
N. B.: Do NOT scoop with iron spoon.
N. B.: In Method 1 we wrote about yesterday, you can also apply a variation of this, that is blend first, pour in air-tight jar and then boil in deep pot filled with water for about 45 minutes to 1 hour.

DEALING WITH GARLIC (II)

Yesterday, we looked at some of the health benefits of garlic [in case you missed it, search on this page]. I hope you are now convinced of the benefits.
Do you use garlic to cook or do other things in the kitchen? Good. If not, it is not too late to start.

But then, do you have problem peeling the ‘skin’ off especially when they are many?
Or maybe it is the “scent” that puts you off and yet you like to use it.
No problem, here is an easy way to peel off the ‘skin’ of garlic.
1. Put in the microwave for 1 minute (microwave on of course)
2. After 1 minute, remove garlics, as you remove from the microwave, you have your garlic peeled already, looking nice and ready to use.

Hor, but I do not have a microwave!
No problem, manage to peel off with your hand/knife, then rub your hand with salt and wash off, smell disappears!

DEALING WITH GARLICS (I)
Garlic is a crop in the onion family, it looks very much like small onions and has about 10 or more cloves. It has a very strong smell that is repugnant to many people BUT then it is very beneficial to our health.

What are the benefits of garlic?
1. Very rich in Vitamin C, (yes, the same Vit. C that prevents infections of different sorts in the body), Vitamin B6 and has trace amount of some other nutrients.
2. Yes, garlic helps prevent infections, but what happens if you are already infected? No probs, garlic also helps to reduce the effects of infections.
3. Do you know anyone with high blood pressure, hypertension, or perhaps you are suffering from such yourself? High dose of garlic can help.
4. Do you have tooth ache? Peel garlic and cut one clove into two, place one part in between the two teeth aching you, just hold tight with your teeth, that is bite hard, no need to chew, leave for like 5 minutes or more and see the magic.
5. Garlic reduces cholesterol.
6. Garlic also contains antioxidants.
