NIGERIA FRIED RICE
INGREDIENTS
Nigeria long grain rice
Chicken
Curry/thyme
Garlic/onion
Green pepper/green beans/green peas
Carrot
Vegetable oil
Chicken seasoning
Chicken seasoning cubes (knorr & star chicken powder)
Chilli oil/ Cameron pepper
Liver
Sweet corn
Fried rice spice
Note: there are different spice for Nigerian fried rice and special fried rice.
PROCEDURE
1. Wash and put your chicken in a clean pot add curry powder, thyme, onion, garlic, seasoning cubes ,chicken seasoning, peppers, salt and your preferred seasoning.
2. Allow to steam with ingredients before adding water to cook.
3. When cooked separate from chicken stock water, fry chicken and set aside.
STEP 2
1. Wash your Nigerian long grain rice at least 5 to 7 times in a clean running water until its completely clean.
2. In a different pot add in little oil or cooking migraine add onion, garlic, and then put in your already washed rice into it and stir fry little, add curry for coloring before pouring in your chicken stock water. (You can decide not to do this, just pour in your washed rice into your chicken water and cook)
3. Adjust with ingredients to taste and allowed to cook till 95% ready do not overcook.
Step 3
1. Prepare your veggies (carrots, green pepper green peas, green beans, sweet corn, spring onion. be very intentional while chopping your veggies so to get a colorful mouth watering fried rice.
2. In a separate wide pan add little oil, carrots, green beans stir to cook.
3. Add in green peas, sweet corn
4. Adjust taste with little seasoning cube, salt, stir, pour in your green pepper and stir fry. (You can remove some veggies after stir fry for an extra garnishing of rice)
5. Pour in your 95% cooked rice into your stir fried veggies and keep staring. (Ensure to allow your rice heat well on fire to avoid it spoiling)
6. Add your fried chopped liver, shrimps, prawns if available and lastly add your spring onion.
Once rice is ready bring down and serve with chicken and coleslaw.
Option 2.
You can decide to pour in your fried veggies into your 95 percent cooked rice, turn well and serve.
