HIBISCUS LEMON GIN COCKTAIL FOR BRUNCH

This Hibiscus Lemon Gin Cocktail is a fun and beautiful brunch drink idea that will give your guests something to talk about. If you are hosting a brunch party and are looking for breakfast drinks with alcohol, but this simple gin cocktail recipe is an absolute winner.

INGREDIENTS
▢ 2 ounces gin
▢ 1 ounce lemon juice (the juice of about ½ a lemon)
▢ 1 ounce hibiscus syrup from Wild Hibiscus Flowers in Syrup
▢ tonic water
▢ 2 thin slices lemon
▢ 1 hibiscus flower from Wild Hibiscus Flowers in Syrup
▢ ice

INSTRUCTIONS
1. Fill a cold glass (that holds at least 12 ounce) to the brim with ice. The glasses I used in the photos hold 14 ounces / 400 ml. I thought it was a good ratio of gin to tonic water when you account for the ice, but you can use a larger or smaller glass depending on how strong you want your cocktail.
2. Add in the gin, lemon juice, hibiscus syrup. Top with tonic water. Give everything a stir. See recipe notes for tips on how to stir a cocktail.
3. Slide the two lemon slices into the drink, against the glass. Top with a hibiscus flower.

NOTES
Anyone can stir a cocktail, but if you want to do it like a bartender, here's a quick short guide on how to stir a cocktail. And you'll look like a pro if you use one of these simple spiral cocktail spoons.

HONEYSUCKLE SIMPLE SYRUP

Ingredients
▢ 1 cup Dry honeysuckle flowers, stems + leaves removed From the Japanese Honeysuckle plant
▢ 1 cup sugar
▢ 1 cup water
▢ 1 naval orange peel, organic + unwaxed preferred

Instructions
1. Clean honeysuckle by dipping them into a bowl of cold water. Set aside.
2. Add the sugar, water, flowers, and orange peel to a small pot, and bring to a simmer. Simmer 5 minutes, stirring occasionally.
(Note: You’re only using the orange peel. You can eat the orange.)
3. Remove pot from heat, and let the flowers steep for 1 hour.
4. Pour the mixture through a mesh sieve into a glass jar or other container. Store in the fridge for up to a month.

Notes
Yields: About 1 cup syrup. Serving size estimates 1 teaspoon per serving.

Hibiscus Syrup

Good homemade syrup always comes handy. It’s easy to make and you can flavor it the way you like. I added some ginger, lemon peels and couple of star anise in it. As it boiled, the color got darker, it released the flavor and in about 15 minutes or so, I had a bottle of hibiscus syrup ready to be used.

prep time: 10 MINUTES
cook time: 15 MINUTES
total time: 25 MINUTES

Ingredients
▢ 4 cups water
▢ 3/4 cup dried hibiscus flowers
▢ 1 inch ginger, finely grated
▢ 2 whole star anise
▢ zest of 1 lemon
▢ 1 cup sugar, add more if you like it sweeter
▢ 1/8 teaspoon salt

Instructions
1. In a deep pan, mix all the ingredients and bring it to a boil.
2. Once it starts to boil, reduce the heat to medium and let it simmer for 10 minutes.
3. Turn off the heat, cover it with a lid and let it steep for 5 more minutes.
4. Strain it through a sieve and store the syrup in an airtight bottle.

Ways to Use Rose Water

Many people think that rose water is simply for drinking as a refreshing cool drink or a rejuvenating hot tea. Due to its versatility, there are SO many more ways to use it.

Here are just a few to give you an idea:

1. As a toner on your face after washing
2. To hydrate skin as a face cream
3. As a makeup remover
4. Reduce puffiness under the eyes
5. As a mouthwash
6. In your bath
7. Spritz on clothes while you’re ironing
8. Add it to baked goods

Ingredients
[Makes approximately 2 cups of rose water]

1. Two cups fresh rose petals OR one cup of dried rose petals
2. Two cups of distilled water

Step by Step Instructions for How to Make Rose Water

1. Add the rose petals to a small pot with water
2. Stir them together well to saturate the petals as they will tend to float to the top.
3. Put the pot on the stove, on low heat.
4. Continue to stir. I mix in the petals so that they are completely covered in the water.
5. When the water starts to steam, cover with a lid, and set a timer for 20 minutes. The lid is crucial because you don’t want the essential volatile oils to escape with the steam.
6. After 20 minutes, strain the mixture through a fine sieve lined with cheesecloth or through a nut milk bag.
7. Add a lid to the rosewater and allow it to cool to room temperature.
8. Rosewater can now be used to make soaps and lotions, a natural face toner, spray deodorant, or simply added to an atomizer and used as a rose-scented body spray.
9. Store the jar of rose water in the refrigerator, and use within 7 days.

Easy Rose Lemonade

The Weather is so Hot here that this is Needed!

Are you looking for a homemade rose lemonade recipe? Or maybe a pink mocktail for a special occasion? This non-alcoholic drink ticks both boxes!

INGREDIENTS

100 ml water
1/2 tbsp Stevia or alternative see note 1
1/3 cup dried rose petals
6 tbsp freshly squeezed lemon juice
sparkling water or Sprite

INSTRUCTIONS

1. Add water and sweetener of choice to a small saucepan. Dissolve over medium-high heat. If the water steams that's ok, just don't let it boil.
2. Turn heat to low, add rose petals and stir. Leave on low stirring occasionally until the colours fade from the petals – it will only take a few minutes. Strain and cool. This is your rose syrup.
3. Place 2 tablespoons rose syrup and 3 tablespoons lemon juice into each glass.
Add ice if you wish, and top with sparkling water. Adjust sweetness if desired.

NOTES
Note 1: Stevia is extremely sweet so only a small amount is needed. If you are using a different sweetener, check the packet and adjust to your taste. Monk fruit sweetener, coconut sugar and brown sugar would all work. Just be mindful that a dark sweetener may alter the final colour of the drink.

Note 2: I used soda water for this recipe and loved it, but you could use a sugar free lemonade or a rose water instead.

NOTES

Love Bark: Rose + Chocolate Recipe

Is it rose week? It just might be.

The base of this love bark is white chocolate. I tell you all the time, but my favorite is Lindt white chocolate. On top of the white chocolate, I swirled just a tiny bit of dark chocolate. The way I swirled it with my fork made it look like there is more dark chocolate than there really is.

PREP TIME : 5 minutes
COOK TIME :5 minutes
TOTAL TIME :10 minutes

Ingredients
7 ounces chopped white chocolate (real white chocolate)
3 ounces chopped dark chocolate
1/4 teaspoon rose water
1 tablespoon dried rose petals (use ones marked 'edible')

Instructions
1. Line a small sheet pan with parchment paper.
2. Place the white chocolate in a microwave-safe bowl, and microwave on 50% power for 30 seconds. Stir, and repeat until the chocolate is almost all the way melted. Stir to melt thoroughly. It takes me 3 pulses, or 1:30 minutes.
3. Spread the white chocolate onto the sheet pan in a 8 x 6" rectangle.
4. Immediately (before the white chocolate can harden), melt the dark chocolate using the same method.
5. On the dark chocolate is fully melted, very quickly, stir in the rose water. Be quick--if you let it set, the rose water will solidify the chocolate!
6. Very quickly dot the dark chocolate on top of the white chocolate.
7. Sprinkle edible rose petals on top.
8. Refrigerate for 20 minutes to set the chocolate.
9. Break into pieces and serve.

Decadent Milk Tea with Brown Sugar

Make your tea time creamy and sweet with milk tea. Super simple and delicious, my milk tea recipe is made special with half-and-half and brown sugar.

Black tea
I’m using Assam loose black tea but any black tea you have will work. I prefer making tea with loose tea since I can adjust how strong I want my tea, but tea bags and tea sachets are also great to use.

INGREDIENT
1. Black tea
I’m using Assam loose black tea but any black tea you have will work. I prefer making tea with loose tea since I can adjust how strong I want my tea, but tea bags and tea sachets are also great to use.

2. Filtered water
Always use high quality water when making tea.

3. Half & half
It’s a dairy product that’s half cream and half milk. It’s a bit creamier than milk but not super thick like cream. It’s perfectly in between the two.

4. Brown sugar
Gives the tea a more richer flavor than just regular sugar since brown sugar is a mix of white sugar and molasses.

STEPS TO MAKE MILK TEA

1. Boil water.
2. Making tea is so much easier when you use an electric kettle with temperature setting since not all tea should be made in boiling hot water.
3. Warm up teapot.
4. Pour some boiled water into your teapot and swirl the water around to warm up the teapot. Discard the water.
5. Combine tea and hot water in a teapot.
6. Cover teapot and steep for 5 minutes.
7. Strain tea leaves and pour hot tea into a teacup.
8. Stir in brown sugar.
9. Pour in half & half.

TIPS FOR MAKING THE BEST MILK TEA
1. Brew a strong cup of tea
Since we’re adding half & half and sugar, you want to make sure the tea is strong and brewed properly with boiling water and steeped for the right amount of time. Weak tea isn’t great for milk tea.

2. Adjust sweetness
Everyone has a different level of sweet they like in their tea. Start with a teaspoon of sugar first and add more if needed.

3. Warm your teapot
It’s a good idea to warm up your teapot with hot water before brewing any kind of tea to keep the water hot during the steeping process.

4. Use black tea
I’ve tried making milk tea with oolong but I like it best when it’s made with black tea. Strong, robust black teas like Assam and Ceylon work best.

Its Sunday! Time for *Rosé Cupcakes*

These rosé cupcakes are topped with dried rose petals and just scream elegance. They are the perfect Valentine's Day dessert and surprisingly easy to make!

Equipment
▢ cupcake pan
▢ cupcake liners
▢ stand mixer with paddle attachment

Cupcakes
▢1 ½ cups cake flour, substitute all purpose flour
▢1 ½ teaspoons baking powder
▢¼ teaspoon salt
▢½ cup unsalted butter, melted
▢1 cup granulated sugar
▢2 large eggs, room temperature
▢2 teaspoons vanilla extract
▢2 tablespoons rosé reduction
▢⅓ cup whole milk

Rosé Buttercream
▢1 cup unsalted butter, room temperature
▢2 cups powdered sugar
▢½ teaspoon vanilla extract
▢3 tablespoons rosé reduction/Syrup

Rosé reduction (Optional)
▢1 cup rosé wine

Instructions

Cupcakes

1. Preheat the oven to 350°F and line a 12 cup muffin pan with cupcake liners.
2. Whisk the cake flour, baking powder, and salt together in a large bowl.
3. In a separate bowl, whisk the melted butter, sugar, eggs, vanilla, and rosé reduction together until combined.
4. Stir in about half of the flour mixture. Then stir in the milk and the rest of the flour mixture and mix until fully combined. The batter will be thin.
5. Pour about ¼ cup of batter into each cupcake liner (they should be about halfway full).
6. Bake at 350°F for 18-22 minutes or until a cake tester comes out clean.
7. Remove from pan and let cool on wire rack.
8. Let cupcakes cool completely before frosting.

Rosé Buttercream
1. In a stand mixer fitted with the paddle attachment, cream together the softened butter, powdered sugar, and vanilla until smooth and creamy.
2,. Add in the rosé reduction/Syrup 1 tablespoon at a time until fully combined. Beat the buttercream for 3-4 minutes on high speed until light and fluffy.
3. Frost cooled cupcakes. I used a Wilton 1M tip for these photos.

Rosé Reduction (Optional)
1. In a small saucepan, bring 1 cup of rosé to a boil over medium-high heat.
2. Once boiling, reduce to medium heat and allow to simmer until reduced down to a little less that ½ cup, about 15 minutes.
3. Set aside to cool completely. You want it to be room temperature or cold before adding it to the buttercream. You can let it cool in the fridge or make it up to 3 days in advance.

Notes
Store unfrosted cupcakes in an airtight container at room temperature for up to 5 days. Store buttercream in the fridge for up to a week.
