A classic washed Ethiopian from Kayon Mountain Farm, this coffee yields a clean, tea-like cup, with yellow peach notes and hints of lime acidity and florals.
Kayon Mountain Farm was founded in 2012 by Ismael Hassen and his family in the Guji zoneโs Odo Shakiso district. Of the farmโs 500 hectares, 300 are under cultivation while the rest remains protected forest.
Hassenโs team follows socially responsible and biodynamic practices, growing coffee under a natural canopy of indigenous trees that slow cherry development and boost seed density.

This classic natural processed coffee is a mix of sidra and catarra varieties, yielding a cup with notes of sugar cane and purple grape with lively lemon-like acidity.
Elvis Tineo Rafael is a second-generation producer from the El Diamante area, and has been placing great care and thought in improving the quality of his coffee, from improving the quality of picking to experimenting with processing methods.

This coffee is sourced through Falcon Specialtyโs partnership wth Siruma Coffeeยฎ in Colombia, which supports sustainable coffee farming and provides local farmers with better access to the larger market.
The nameย Sirumaย is taken from the indigenous Wayuu people of Colombia โ it means โheaven and skiesโ โ as well as a nod to the high altitude Colombian coffee lands, the name also signifies Sirumaโs aspiration to build better futures for the farming families they work with.
