Harvested on February 5, 2025, from Block Colubre at 1920–1980 masl.
Pulped coffee was fermented in GrainPro bags for 48 hours under shade at Finca Nuguo, then transported to the City of David for controlled drying at 24°C on February 7, and rested at 11% humidity.

this double anaerobic honey process starting with isolated bacteria and yeast from coffee material, added to fermentation of whole cherries, fermented for 3 days in laid-down barrels, depulped & washed, then moved to indoor raised beds for 7 weeks.

this process focusing on sweetness and mouthfeel of coffee, with the flavor notes of coffee blossom, lychee cordial, white peach, white peony tea. available in both black and white.
