Baking chiffon is like a love story.

It begins with a separation of egg whites and egg yolks. Like a first heartbreak.

The egg yolk travels to Japan, learning the language of flour. It drinks plenty of orange juice and gathers fragrant orange peels.

The egg white, feeling lost, turns to sugar for comfort. Dancing with sugar, time flies. It becomes soft, glossy, and light.

Then comes the reunion, yolk and white meet again.

They come together, embrace, and transform… into a chiffon cake. Hehe. 😛

We‘ve prepared a little surprise to go with our Nyonya Laksa for this weekend.

This time it is not Laksa flower gelato.

This time, it’s something light and refreshing~ Cucumber Lime Sorbeto

Those who’ve tried said the same thing: it’s really refreshing! ❄️❄️
To me, after a rich and flavourful bowl of laksa, a scoop of bright and refreshing sorbeto just feels perfect.

In Malaysia, many dishes are paired with cucumber, such as nasi lemak, chicken rice, and even some versions of laksa come with shredded cucumber. The inspiration for this sorbeto also comes from the popular Indonesian drink, Cucumber Lime Juice.

This sorbeto isn’t just cucumber. It’s balanced with lime and a touch of lime zest to bring out its aroma. It is available in limited quantities,
and will only be served as part of the Nyonya Laksa set.

Someone asked if we must always create a new flavour for every pop-up. I think—yes.
That’s what makes it sincere, and more fun.

This time NYONYA LAKSA.

A Bowl of Memories | Grandma’s Nyonya Laksa

When we were young, whenever that rich, spicy aroma drifted out from the kitchen, we knew Grandma was cooking Nyonya laksa again.

It was a dish that took hours to prepare. First, two broths had to be made—prawn broth and bone broth—each with its own depth and sweetness. Then came the slow frying of spices and chilies, releasing their fragrance bit by bit, before being blended into the broth to create that thick, comforting soul of the dish.

The toppings were never taken lightly: shredded chicken, eggs, fish cake, fresh prawns, long beans, tofu puffs… Layer upon layer, like Grandma’s gentle reminders to us. With every sip of soup and every bite of noodles, it was filled with the taste of home.

After Grandma passed, laksa appeared less and less on the dining table. But every time we make this dish again, that familiar aroma softly brings us back to those days.

一碗承载回忆的味道|外婆的娘惹叻沙

小时候,每当厨房飘出那阵香辣浓郁的味道,我们就知道——
外婆又在煮娘惹叻沙了。

那是一道要花上好半天功夫的料理。
先得熬两锅汤——虾汤与大骨汤,各有自己的深度与甜。
再把香料、辣椒一点一点炒香,
拌入汤中,才成了那碗浓稠又温柔的灵魂汤底。

配料也从不马虎:鸡丝、鸡蛋、鱼饼、鲜虾、长豆、豆腐卜……
层层叠叠,像是外婆给我们的叮咛,
一口汤,一口面,满是家的味道。

外婆离世后,叻沙渐渐少出现在饭桌上,
但每次再做起这道料理
那熟悉的香气,总会轻轻把记忆带回那个年代。

想象一下,世界末日终于来了。也许是一颗撞击地球的小行星?哪个专制政权发射了核弹?机密实验室的绝命病毒外泄再大规模传播?外星人入侵地球?超级地震和全球大海啸?或者,大部分人类都变成了丧尸?

好啦,这种电影我们都看了很多。第一关是先拼死地活下来。你也只有“死”给他拼了,毕竟不活就是死。需要很多的运气,比如你不能成为第二个感染病毒的人。行星撞击的大爆炸没有刚好在你家旁边发生。

然后呢?怀着乐观的心情,总会有一小部分幸存者建立了聚落,拢合了剩余的物资,打算重建人类文明。这时候,你是个有用的人吗?

你有什么傍身的生存技能吗?你是消耗物资的废材,还是可以为聚落有所贡献的人才?

你会种菜吗?你懂得辨认毒蘑菇吗?你会生火吗?你会修理发电机吗?你知道怎么过滤出干净的食用水吗?你会发送无线电报吗?你会修理汽车吗?你知道怎么用药吗?你能分辨东南西北吗?你懂怎么追踪小动物的足迹吗?

没有。我们大部分人都不会这些。我们是那种没有了wifi就哀叫的现代人。

等等,万一那是一个没有网络的新世界呢?以及,要是像电影The day After Tomorrow一样,部分人类把图书馆的书都被烧光来取暖了呢?

麻烦来了。人类文明确实伟大,但所有的重要知识都分散在不同人类的脑子里。啊还有些散落在网际网络和各种说明书里,没有人会特意去记。

完蛋了,就算侥幸逃过大灾难,退回到农耕渔猎社会的文明水准,我们也未必可以活下来。

《最后一个知识人》要聊的就是这些:末日之后,你可以怎么活?

如何组装、架构通讯设备和外界联系?若欠缺电力设备,如何自行发电、制造能源?燃料耗竭之后,怎么开车、烹饪甚至是炼铁、烧制玻璃?

没有冰箱,要怎么让食物在土盆里保鲜?饮水如何过滤、消毒?种子和农具要从哪里来?如何用汽车引起和废弃零件,来制造暖炉、临时发电机等设备?

我们也来讨论更实际、目前更接近我们的危机吧:如果被卷入战争,需要先囤积什么物资?要把现金换成黄金吗?

这也是一次集体疗愈聚会,我们一起来确认自己是一个怎么样的废材🙂‍↔️

Khao Jam is a traditional dish from southern Thailand.
Locals gather dozens of wild herbs, slowly pound the leaves to extract their juice, and use this natural herbal liquid to cook the rice. As the grains absorb the fragrance of the herbs, the rice turns a gentle natural green, which is why it is often called “green herb rice.”

Originally, this dish was not something prepared for guests, but rather an everyday home meal in southern Thai households.
In our home, it appeared in the kitchen because our Thai cook introduced it to us. Over time, it quietly became one of our family’s regular comfort dishes.

A bowl of Khao Jam may look simple, but the preparation is actually quite elaborate.
Besides making the green rice by slowly extracting juice from dozens of wild herbs, many fresh accompaniments must also be prepared: shredded cucumber, long beans, shallots, laksa leaves, grated coconut, torch ginger, mint, and more.

When everything is mixed together, the herbal fragrance, the aroma of fresh herbs, the gentle richness of coconut, and the crispness of vegetables come together beautifully—enhanced by a specially prepared fish sauce that ties all the flavors together.

This humble bowl of green herb rice is not just about taste.
It carries the quiet, everyday flavors of a family kitchen, passed down and enjoyed over time. ✨

青叶饭 · Khao Jam

青叶饭(Khao Jam)是源自泰国南部的传统料理。
当地人会采集数十种野生草叶,将草叶慢慢捣碎取汁,再用这天然草汁来煮饭。米粒吸收了草叶的清香,呈现出温润自然的绿色,因此也被称为“青叶饭”。

这道料理原本并不是宴客菜,而是泰南人家的日常家常饭。
在我们家里,也是因为家里的泰籍厨娘把这道料理带进厨房,慢慢地,它就成了家里的“常备家常料理”之一。

一碗青叶饭,看似简单,其实备料与工序都十分繁复。
除了需要几十种野草慢慢捣碎取汁煮出“绿饭”,还要准备多种清香爽口的配菜:黄瓜丝、长豆、小洋葱、叻沙叶、椰丝、姜花、薄荷等。
当所有食材拌在一起时,草叶的清香、香草的芬芳、椰丝的温润与蔬菜的清爽,还有加上特制鱼露层层交织。

这一碗看似朴素的青叶饭,其实吃的不只是味道,而是一个家庭厨房慢慢延续下来的日常滋味。

Life is unpredictable. We never know when difficult moments may come, but learning these skills reminds us that even small actions can make a difference. The best we can do is prepare ourselves — so that when difficult moments come, we know how to help. ❤️

Time flies — tomorrow is already our CPR & AED Workshop, and we just realized we haven’t really had the time to promote it.

If you’ve been thinking about joining, this is your sign to sign up now.

A young boy came by the shop recently. I asked if he wanted to join the workshop. He quietly told me… he’s actually a CPR competition champion 🙈.

Learning first aid may not change everything. He said that when a real emergency happens, the person giving CPR will feel a lot of pressure. But at least if we know how to help, at least we know what to do — and we won’t be left with regrets.

Yes, there are places where you can learn it for free. But sometimes we keep telling ourselves “next time”… and eventually we forget.

First aid can’t wait. Let’s learn it together. ❤️
