Porchetta 是很多人懂得吃的美食，有賣 Porchetta 的地方，人們總是興致勃勃地大排長龍。
很多人不知道，市面上大多數的 Porchetta 都是現代的簡易版本，肉餡只是醃漬的酸菜。
我們要做，就做到最好。因此找出古羅馬食譜，百般試驗，做出這個古羅馬王者捲肉。
內餡含培根、松仁、豬肉碎、葡萄乾，以及幾種香料秘方調製而成。
為了保持華人最喜歡的外皮酥脆，我們還研究了燒烤秘方、保存及二次燒烤的手法。
為了配合捲肉，蘸肉的醬汁也不馬虎。我們自製青醬，含歐芹、紅酒醋和鯷魚，拿來配合捲肉，味道更為豐富。
我們每個星期五推出古羅馬王者捲肉。
真正懂得美食的，就不會錯過。

Porchetta is a delicacy appreciated by many, and wherever it is sold, people eagerly line up in long queues.
Many people do not know that most porchetta available today is a simplified modern version, with the filling consisting merely of pickled sauerkraut.
When we make something, we strive to make it the very best. That is why we sought out ancient Roman recipes, conducted countless experiments, and created this Ancient Roman Royal Pork Roll.
The filling is made with bacon, pine nuts, minced pork, raisins, and several secret spices.
To preserve the crispy crackling that Chinese diners love most, we also researched grilling secrets, preservation methods, and techniques for reheating and grilling it a second time.
To complement the pork roll, we take equal care with the dipping sauce. We make our own green sauce with parsley, red w**e vinegar, and anchovies. Paired with the pork roll, it creates an even richer flavor.
We offer the Ancient Roman Royal Pork Roll every Friday.

這星期日開始，早上 11am–1pm。
意大利餐本來就有很多素食，尤其是西北部，熱那亞（Genova）一帶。一打開那邊的食譜，盡是原汁原味的素食美食。
我們做意大利餐已經有 26年的歷史，我們的素食「人口」自然也不少。比如 Pesto Pizza、意式烤蔬菜、芝士烤茄子（Eggplant Parmigiana）、野蘑菇湯等等，融合了素食材的健康、鮮味，再加上意式烹飪的簡單、美味。
學意大利蔬食，實在是進一步地對自己好、對家人好，名副其實的「精神糧食」。
這些年來，我們擁有不少素食的顧客。比如在巴西住了十七年的法師，喜好卡布奇諾；一聞到意式烤蔬菜，就笑稱「後悔只要了一份」的和尚；還有一來就要十多碗蘑菇湯及椰子奶昔的師父。
最重要的是，憑著廿多年的烹飪經驗，我擁有一份經典食譜，可以以最快的時間，最簡單的方法，煮出最健康的意大利。這美食樣的課程還沒有人做過，也沒有人學過，千萬別錯過這個難得的機會。

Italian cuisine already offers many vegetarian dishes, especially in the northwest, around Genoa (Genova). Open a cookbook from that region and you will find an abundance of authentic, delicious vegetarian recipes.
We have been teaching Italian cooking for 26 years, so naturally we have quite a number of vegetarian students and customers. Dishes such as Pesto Pizza, Italian roasted vegetables, Eggplant Parmigiana, and wild mushroom soup combine the healthiness and freshness of vegetarian ingredients with the simplicity and deliciousness of Italian cooking. 🇮🇹

Over the years, we have had many vegetarian customers. There was a monk who had lived in Brazil for 17 years and loved cappuccino; another monk who, after smelling the Italian roasted vegetables, laughed and said, “I regret ordering only one portion”; and yet another who would order more than ten bowls of mushroom soup and coconut milkshakes at a time.

1 今天休假，不過還是有一些顧客朋友打電話來，說想過來。我只能說聲對不起，今天休息。

昨天「新好運」的老闆來聊天，也聊得支離破碎，因為員工打烊之後，還有一桌前天來過一次的日本夫婦想吃晚餐。

我勉力而為，廚房和披薩站兩邊跑，還是做給他們吃。等到我自己打烊的時候，已經很累了。

2 如果你問我，為什麼選擇Centerstage，如今的我會回答：我可能是不認老。

我還有許多沒有做過的東西想做。我像是一個人在十面埋伏之中，沒有路，也想找一條路出來。

3 現在是盡我所能，先把店面做好，完成第一階段。

可以把披薩做好——我親自做。老實說，我想把它做到一個「新高度」。

可以把食物做得美味、美觀，而且份量十足。

餐牌暫時還是用回舊的。音響則比之前更好。我已經邀請沈先生在聖誕節來唱歌，也可能有史以來第一次做Countdown。

以我的靦腆，26年來，我從未做過這樣的活動。

4 第二階段，還是要大力宣傳，打廣告，讓老顧客知道我們搬了新地方，也希望大家多來幫襯。
