It is a small-sized chicken with fluffy, soft, and downy plumage that resembles fur, giving it a silky appearance. The feathers lack the usual barbicels, which make them look more like fur than feathers.

Silkie black chickens have blue-black skin and bones, as well as black flesh, which sets them apart from other chicken breeds.

In culinary circles, Silkie black chicken is highly regarded for its tender and flavorful meat. Its unique appearance and culinary qualities make it a sought-after ingredient in certain cuisines, especially in Chinese and Asian cooking.

In this week menu special, we have 2-ways preparation of this Silkie Black Chicken, confit and breaded. Served with Coffee Jus and Purple Carrot Coulis.

Here’s another fun ingredient to work with.

Catfish is a very ‘underated’ fish in the market. However there’s so much potential and value we can explore to think of it. The flavor and texture are similar to the japanese eel ‘Unagi’ for instant. We wanted to learn more and champion local produce as much to bring it to the next level.

Eating honeycomb is one way you can enjoy the fruit of bees’ labor. This local honeycomb is going to be featured on our dessert as the main component, burst with golden nectar and very dense with sweetness. You can also actually eat the whole honeycomb, including the honey and waxy cells surrounding it.

Our takes on this dessert is to showcase this interesting local product as the ‘star’ of the dish itself, it is not only healthy substitution to sugar but very versatile flavor pairing component on our dessert 🍯
