We started with pesto. Back when we were et cetera, it was one of our signature sauces. Something people come back for and still asked for it until this day.

When we brought this to The Chinois, we wondered, what would happen if we made it ours?

The we thought of Lei-cha. They both share similar ingredients. So we followed that thought. A little less sweet basil, a little Thai basil. Olive oil swapped for sesame oil. Shallots and dried shrimp joined the mix. Somewhere along the way, pesto met lei-cha.

The result is still unmistakably pesto. But underneath it, you’ll find herbaceous, nutty and savoury aromatics of a Hakka lai-cha.

It is a little piece of where we came from, transformed into something that belongs to The Chinois.

From fragrant pastas to sizzling claypot rice, our new lunch menu brings familiar Chinese flavours to the table in a way that feels unmistakably Chinois.

Lunch every Wednesday-Sunday, 12pm-3pm.
Meals under 35.

There’s something comforting about 1/2 chicken arriving at the table.

Ours begins with dry aged kampung chicken, giving the meat a deeper flavour and a beautifully concentrated texture. Served with a creamy pan sauce enriched with morel mushroom, red wine and sherry.

Definitely a dish to slow down for, share generously and enjoyed with a bottle of wine.

House-made, with a crisp golden exterior giving way to a soft, savoury centre.
Finishes in a fish sauce caramel, bringing a deep, savoury sweetness, and topped with fried shrimp for that final hit of umami and crunch.
