The cherry valley duck, a breed known for its fine grain, tender bite and rich in flavour. They’re raised free-range, without hormones and antibiotics in Balik Pulau, Penang

The dry-aged breast are cooked gently to retains its juiciness, then finished with a duck jus enriched with umeshu, giving it a rounded sweetness that lifts the richness of the meat.
