We use fresh salmon heads in our curry. The heads are supplied to us by our parent company, Smokehouse Fishery Sdn Bhd which imports fresh chilled salmon for its smoked salmon production. Consequently, the heads will be unlike the types purchased from supermarkets which are likely to be from frozen salmon harvested months ago, with a fishy aroma.
