History has it that grilled fish is brought to Malacca by the Portuguese traders. Malaysians had since injected our own creativity into this classic dish.

The Portuguese variation is usually wrapped in tinfoil, and generously covered in sauce, chopped chili, onion, and more sauce. Still equally delicious. To prepare an Ikan Bakar Mak can be proud of, the fish is first marinated in a flavourful s

pice paste consists of sambal, turmeric and other spices, then wrapped in a banana leaves parcel and grilled to a delectable perfection with a touch of crispiness.

The smell of burnt banana leaves imbues the fish with an irresistible smoky flavour and the spicy paste, together with the marinate imparts it with amazing flavours. Popular choices of fish include Tilapia, Snapper, Sea Bass, Pomfret, Mackerel, Stingray/Skate, Squid and Prawn.
