D'Beefies | 2022 - Smoked Chicken Rice recipe with D'Beefies!
Chicken rice looks like a hard dish to cook but anyone can do it if you trust the steps and process. Unlike the usual recipes of chicken rice, we are introducing a recipe using our very own kind of approach. Smoked Chicken Rice is something worth to try for a special dinner and here is the recipe!
For the rice:
3 cups uncooked washed rice
5 tbsp vegetable oil
4 cloves finely chopped garlic
4 finely chopped shallots
2 + 1/2 cups + 2 tbsp chicken broth
4-6 blades of pandan leave, screwpine leaves
1 small thumb of ginger, cleaned and bruised
1 tbsp of the garlic and shallot oil
70 g chicken fats
1 + 1/2 tsp salt, to taste
For the chicken:
D’Beefies smoked chicken
For the chilli sauce:
90 g (3 oz.) red chilies, you may add in some bird's eye chili
15 g garlic
50 g (2 oz.) ginger
1 tsp salt
1 tsp sugar
50 ml (2 oz.) chicken broth
60 ml (2 oz.) lime juice, to taste
Preparing the rice:
Heat oil in wok, fry chopped shallots and garlic till fragrant and golden in colour. Add rice and stir well. Transfer the rice mixture to the rice cooker. Once transferred, add chicken broth, pandan leaves, ginger, garlic and shallot oil, chicken fats and salt into the rice mixture. Cook according to the rice cooker's manual instruction.
Preparing the chicken:
Cook the D’Beefies smoked chicken (any parts) on pan for a while and set the chicken aside after heating it on the pan.
After everything is done, serve the rice with the smokey chicken and soup to eat together and taste the differences with our special smokey chicken!
