A savoury dessert, and perhaps the most unexpected dish in the collection.

The Cured Sheep’s Milk Comté has a mellow, savoury depth with a gentle nuttiness rather than an overly salty flavour. Caramelised onion brings a touch of sweetness, while the 60% dark chocolate adds only a subtle cacao note that works surprisingly well with the cheese.

Rich, balanced and unlike the usual dessert, this is one to try with an open mind.

Beautifully crafted by Chef John, this Chicken Liver Mousse on Toasted Brioche is just as striking in flavour as it is on the plate. Uniquely unexpected too! 🍞🌹

The mousse is smooth, rich and savoury, lifted by the gentle tang of roselle, with cacao nibs and beurre noisette adding depth to every bite. It is a truly unique combination and something you do not often come across in Kuching.

The brisket is the heart of this one. 🍖

Slow-braised until beautifully soft and tender, the meat carries a bold, deeply beefy flavour in every bite. The sweet onion complements its richness without overpowering it, while cacao and creamy burrata bring everything together in just the right balance.

Rich, savoury and incredibly satisfying, this is a taco made for those who really appreciate the flavour of well-cooked meat.

A little cacao, thoughtfully placed! 🍫

Created in collaboration with BORCO Chocolate, this special menu brings a distinctive touch of cacao to three very different dishes. Each pairing is unexpected in its own way, with the savoury Comté and liver roselle toast being particular highlights, alongside a taco with bold, beefy depth.

Available at ROOTS from 28th July until 31th August 2026.

What a pleasure it was to welcome some of Kuching’s chefs to ROOTS at the Old Court House for an evening of good company and delicious Australian lamb.

It was also an honour for Chef John to craft something special with the premium Australian lamb provided. We’re so happy our space was chosen to bring this memorable dining experience together. Thank you to Supreme Cold Storage for the opportunity! 🥂✨
