你每天喝的咖啡，其实不是“纯咖啡豆”

很多人每天都喝咖啡。

但我想问一个问题：
你喝的，是哪一种咖啡？

在马来西亚，
大多数人每天喝的不是hand brew，
不是latte，
也不是specialty coffee。

而是南洋咖啡。
也就是在kopitiam里喝到的那种。

香、浓、苦里带一点焦糖味。

很多人以为那只是
“烘得比较深的咖啡豆”。

其实不是。

南洋咖啡的制作，其实很特别

传统南洋咖啡的烘焙方式，
和西方咖啡完全不同。

一般流程是这样：

先把咖啡豆放进烘焙机。
大约200°C左右
烘焙30多分钟。

这个过程主要是：
把咖啡豆里的水分逼出来。

脱水后的咖啡豆，
会慢慢变成深褐色，
香味开始出来。
但南洋咖啡真正的“灵魂”，
其实在下一步。

第二步：炒糖

烘好的咖啡豆，
会倒进一个大锅。

接着加入：
👉🏻白糖
👉🏻牛油（或油脂）

然后继续炒。

温度会更高，
可以到300°C 以上。

白糖在高温下会变成焦糖，
焦糖会附在咖啡豆表面。

这也是为什么
南洋咖啡有一种：
微微焦甜的香味。

牛油或油脂
则会让咖啡喝起来更顺滑。

最后咖啡豆会形成
一层油亮的焦糖外衣。

📌为什么要这样做？

原因其实很现实。

早期南洋咖啡，
是海南人带来的，
当时的咖啡豆品质并不算高。

为了：
✔ 调整风味
✔ 降低苦味
✔ 让咖啡更顺口

就发展出这种：
糖 + 油一起烘焙的方法。

慢慢就变成
新马两地的咖啡特色。

还有一件很多人不知道的事

以前有些烘豆工厂
为了降低成本。

会在咖啡里加入：
👉🏻麦粒
👉🏻玉米
👉🏻焦糖

一起炒。

咖啡磨成粉以后，
一般人很难察觉。

味道不够好怎么办？

就靠：
👉🏻奶
👉🏻糖
👉🏻冲泡技巧

来调整。

这些做法
在过去其实很常见，
也慢慢变成一种地方文化。

所以南洋咖啡到底算不算“纯咖啡”？

如果用specialty coffee的标准来看：
它当然不是。

因为：
✔ 加糖烘焙
✔ 有油脂
✔ 有时会混入其他材料

但如果用文化来看：
它就是南洋咖啡。
是新加坡和马来西亚，
几十年的饮食文化。

其实最经典的南洋早餐是这样

一杯 kopi
一份 kaya toast
两颗半熟蛋

很多人从小到大
都是这样开始一天。

这已经不只是咖啡，
而是生活。
