Dobinmushi - a delicate tribute to Autumn. Let the King of Mushrooms - Matsutake serenade your senses as you indulge in the soulfulness of the season.

The matsutake mushroom is a prized ingredient in Japan and a symbol of autumn for its distinct aromatic odor and flavour. We gently steamed this delicacy with tsukune in a dashi broth with yuzu and sudachi which produced an intense but delicate flavoured clear soup perfect with your omakase course.

A wonderful dance of flavours with our Kawahagi Sharisotto.

The single thread-sail filefish (kawagahi) is served with its own liver. Mixing the sushi rice, offered on the side with the decadently creamy sauce, you’ll get your own intoxicatingly rich DIY version of “sharisotto”, the sushi rice risotto.
