Why is the ramen broth in a separate bowl?

Because this isn’t your regular ramen.

It’s Kombusui Tsukemen — springy noodles with a light, silky kombu coating, served alongside a concentrated pork broth for dipping.

First, taste the noodles on their own.

Then pick up a small portion, dip it into the broth and slurp.
