Vegetables are an essential part of any good meal. They are every bit as essential as the meat, and must be just as good. Siamese pumpkin leaves, or pucuk labu siam, are a star on our grill. Together with nothing but olive oil, sea salt and a raging flame, the charred, smoky plate of greens sings of crunchy leaves, snappy stems and much-needed balance.
