Beef Brinjal

This is something I dreamed up last night and had to make immediately and share with you all. Enjoy!

Ingredients:
• Sliced beef: 250 gm
• 1 medium sized brinjal (eggplant)
• 2 medium sized tomatoes
• 1 large red pepper
• 3 jalapenos
• 1 large garlic
• 1 large onion (cut into rings)
• 4 to 5 green chilies
• Coriander leave: 4 TBSP chopped
• Cumin seed: Half tsp
• Chaat masala: 3/4 tsp
• Garam masala: 1/2 tsp
• Cumin powder: 1/4 tsp
• Pepper:1/2 tsp
• Salt
• Mustard oil

Step 1: The Beef!

Marinate the beef with salt & pepper for 30 minutes and sauté.

Step 2: The Sauce!

Grill the eggplant, tomatoes, jalapenos,red pepper, garlic,onion rings and green chilies.
After grilling, peel off the skins and get rid of the seeds.
Grind all the grilled goodness together except for the onion rings and green chilies.
In a hot skewer, pour mustard oil and add whole cumin seeds. Pour in the grinded sauce into the hot oil.
Add salt, chaat masala, garam masala and half a cup of hot water.
Bring it to a boil and reduce the heat.
Add in the sauteed beef, grilled onion rings, green chilies and coriander leaves.
Keep the lid on for 5 to 6 minutes.

Voila! You are ready!

Step 3: Garnish!

Garnish the dish with sprinkles of cumin powder, chaat masala, coriander, red chili flakes and mustard oil.

Serve hot!

Steamed Fish – Thai Style My Style!

The Sauce:
• Soy sauce (1/4 cup)
• Fish sauce (1/4 cup)
• Sesame oil (1 tsp)
• Brown sugar (1 tsp)
• Lemon juice (2)
• Coriander, green onions, red and green chilli (use your best judgement)
• Lots and lots of chopped garlic

The fish:
• 1 large fish cleaned and scaled – barramundi/Asian sea bass is recommended
• Marinate the fish with salt and pepper for 10 minutes
• Bake in oven for 18-20 minutes at 180 degrees, covered in foil
• Pour the sauce onto the fish
• Cover up and leave for a few minutes for the flavour to soak in
• Serve with steamed rice!

Cure your Monday blues with this healthy and easy to prepare beef radish soup. Drawing inspiration from Korean cuisine, this simple comfort food will take you no more than an hour to prepare. Sharing the recipe below:

Ingredients:
1. 1.5 litre chicken stock
2. 1 large radish (sliced into bite sizes)
3. 2 tbsp sliced ginger
4. 1 cup of sliced beef (marinated with salt and pepper)
5. Secret Sauce Combo: Fish sauce, soy sauce, sesame seed
oil and sugar. Add salt if you need to.
6. Garnish with thinly sliced chives, spring onions and green
chillies

Directions:
1. Pour chicken stock in a pot with sliced ginger and bring to boil
2. Add the marinated beef and boil for 15 minutes
3. Add the sliced radishes and keep the heat on for 7-8 minutes
4. Pour in the secret sauce and simmer for 5 minutes
5. Garnish and serve hot
6. Enjoy with steamed rice and kimchi :)
