Meet Chef Nao Hirata

Started his journey from Hotel Okura Amsterdam, where he strengthen his japanese cuisine foundations, and bringing his craft to Malaysia.

The rare chance of connecting with guests directly is what drives him to the world of sushi.

Chef Nao will be the attending Chef at Grand Hyatt this coming 9th April onwards! This will be a great opportunity to connect with him.

Wild Red Sea Bream caught in these tides swims harder, grows cleaner, and arrives at our counter carrying a flavor that is quietly extraordinary. We age it with care, allowing moisture to settle and umami to deepen before it meets the rice.
