At IL Forno, we cut our pizzas with scissors instead of a pizza cutter.

Why? To preserve the cornicione (pronounced cor-nee-cho-nay), the airy, beautifully puffed crust that's a hallmark of authentic Italian pizza. Scissors make cleaner cuts without compressing the dough, so every slice arrives exactly as intended.
