A New Culinary Chapter at Lai Ching Yuen: Welcoming Our New Wok Chef, Chef Chong Sin Ngee.

Lai Ching Yuen is delighted to welcome Chef Chong Sin Ngee (张新義师父) as our new Wok Chef. With more than four decades of culinary expertise, Chef Chong brings a wealth of experience shaped by a remarkable journey across diverse cultures and cuisines.

Chef Chong's culinary career began in Singapore, where he trained under the mentorship of a Hong Kong chef. He later returned to Malaysia in the 1980s to further hone his craft at the Banker Clubs in Amoda Building. His passion for culinary excellence subsequently took him to Singapore, the United States, and the United Kingdom, enriching his knowledge of flavours, techniques, and culinary traditions from around the world.

For Chef Chong, cooking is more than a profession. It is a treasured “手艺”, a lifelong craft that has enabled him to explore the world, build meaningful connections, and continuously refine his artistry through every experience.

Specialising in Cantonese cuisine with Malaysian influences, Chef Chong combines the essence of traditional wok craftsmanship with insights gained from his extensive international experience. The result is a distinctive culinary style that honours heritage while embracing innovation and depth of flavour.

Guests can look forward to an exciting new menu currently in development, where Chef Chong's passion, expertise, and dedication will come together to deliver a memorable dining experience at Lai Ching Yuen.

荔晶园很荣幸迎来张新義师父（Chef Chong Sin Ngee）担任新任炒锅主厨。拥有超过四十年的烹饪经验，张师父丰富的厨艺历程横跨不同国家与文化，积累了深厚的烹饪技艺与经验。

张师父的厨艺生涯始于新加坡，早年师从一位香港厨师。1980年代，他回到马来西亚，在Amoda大厦的Banker Clubs继续磨炼厨艺。此后，他的厨艺之旅延伸至新加坡、美国及英国，让他不断接触不同的风味、技法与饮食文化。

对张师父而言，烹饪从来不只是一份职业，而是一门值得一生珍惜的“手艺”。这门手艺带他走遍不同地方，结识不同的人，也让他在每一次经历中不断学习、探索与精进。

张师父专长于融合马来西亚风味的粤菜，将传统粤菜的炒锅技艺与多年国际历练所累积的经验相结合，在传承经典的同时，融入创新与丰富的风味层次。

目前，张师父正为荔晶园筹备全新菜单。宾客将有机会品尝他多年经验、热忱与坚持所呈现的全新风味，为荔晶园开启一段令人期待的美食新篇章。
