VietThai cultivates a trending culture to heighten the pleasures of work and dining through good food and craft cocktails; connecting people and families. Starting off young and ambitious, Chef Kam moved to Switzerland to work as a cook in Chinese cuisine. In the hotel, he had the opportunity to meet with chefs from other nations whenever the hotel organizes International Gourmet Festival. That was the time he befriended chefs from Thailand and Vietnam where the used of backyard spices and herbs captivated him. Wide-eyed and enthralled by ingredients as simple as a lime, Chef Kam watched as the chefs cooked a variety of dishes from the region of Indochina with taste bustling with sweetness, sourness, saltiness and spiciness that broke all the rules of Chinese cooking. With a burning passion and love to experiment with the newfound ingredients and techniques in Thai and Vietnamese dishes, he started to design new menus with the region’s spices and herbs. Returning to Malaysia, armed with Chinese culinary skills on his left hand and Vietnamese and Thai cooking methods on his right, he mixes the unique ingredients of the world’s three favourite cuisines to create VietThai.
