Meet Waffam. 🥥
Not quite appam, not quite waffle — ours is what happens when Kerala wanders into Malaysia and they decide to cook together.
Lacy, coconutty edges. A crisp waffle bite. Piled high with banana fritters, a scoop of burnt coconut ice cream, and a slow drizzle of palm brown sugar.

Lobster Ulartiyath, a showstopper we have been told..

Seafood aplenty in Kerala, especially clams, mussels and various lobsters. These are indigenous nearer to the backwaters of Kerala.

Ulartiyath is a cherished historical craft of slow roasting and then sauteing the protein with roasted spices and slivers of coconut.

This Father’s Day, we’re bringing all three to your table in a single meal.

To begin
Fish Paniyaram & Crab Dahi Puri.

Appam with Chicken Ishtu — the Sunday morning dish of Kerala’s oldest Christian community. A faith that arrived here in 52 AD.

Duck Roast from Kottayam — slow-cooked in roasted coconut, black pepper, jaggery. Rich, dark, unmistakably Nadan.

Thalassery Mutton Biriyani — Kaima rice, whole spices, slow-cooked mutton, fried cashews and raisins. The most celebrated biriyani on the Malabar coast.

Sweet endings
Ada Pradhaman with Bru Kapi Ice Cream — hot and cold, bitter and sweet. One bowl, one story.
