Did you know that not all coffee cherries ripen at the same time? Skilled coffee farmers must carefully assess each plant, and cherry, as they hand picking the ripest ones.

These can typically be identified by their colour and appearance and provide the foundation for the coffee's intended flavour profile before they undergo processing at the mill.

Long before you can brew a fresh cup of 100% Arabica specialty coffee, each harvest begins its journey in the plantations.​​

With great care, coffee farmers handpick each cherry, carefully assessing its ripeness and removing those with visible defects before placing the selected cherries into baskets to be brought back to the coffee farm.​​

From there, the cherries undergo a meticulous process of depulping and washing before being laid out to dry under the sun. Once dried, they become the green coffee beans we know today.
The beans are then carefully bagged and prepared for their journey to Marrakech, where they will be roasted according to the highest standards of coffee craftsmanship.​​
