Some bottles earn their place at the table.

Yalumba The Cigar Cabernet Sauvignon 2021 takes its name from Coonawarra’s famed cigar-shaped strip of terra rossa soil — a region celebrated for producing some of Australia’s most distinctive Cabernet Sauvignon.

Dark fruit, cedar and a depth of cacao give it the weight to stand comfortably alongside our richer dishes, while its balance keeps every sip inviting.

A bottle we find ourselves recommending often. And for good reason.

A flavour noticed somewhere else. An ingredient paired mentally with another. A combination replayed over and over before a single pan touches the heat.

Some come together quickly. Others take months of edits before the plate finally feels right.

There’s a rule in this kitchen.

Rich filling, restrained sauce.
Delicate filling, more expressive sauce.
Short pasta, clingy or chunky sauce.
Long pasta, silky or well-emulsified sauce.

It sounds simple. It took years to trust it.

The rule exists because balance is what makes a dish feel complete; not too much of any one thing, never one component fighting another for attention. Every pasta on our menu was built around this principle first, flavour second.

Traditional principles, fresh new flavours.

Caught somewhere between restraint and indulgence. A sweet spot where richness never overwhelms, and every forkful still feels as compelling as the first.

Fresh pasta, finished à la minute, with a sauce that clings to every fold exactly as it should. The Spaghetti alle Vongole remains on the menu until the end of May.
