San Simón da Costa is an artisanal Galician cheese, shaped by tradition from pasture to table.

Made from the milk of free-grazing Rubia Gallega cattle, each cheese is hand-moulded into its distinctive acorn shape, then gently smoked until it carries the quiet aroma of the countryside. Protected by its Designation of Origin, it is made without preservatives or additives, allowing the milk, smoke, and time to speak clearly.

Its flavour is delicate yet memorable: lightly smoky, mineral, gently salty, with a rustic warmth beneath its mellow creaminess. We serve it with porcini cream and salt-roasted nuts, or bathed in salted honey caramel with umami chicken biscuits.

Torta del Casar is one of the four great sheep’s milk cheeses of Extremadura, Spain.

Made from raw sheep’s milk, it is rich and buttery yet remarkably gentle, with a delicate tang characteristic of sheep’s and goat’s cheeses, and the faintest suggestion of pleasant bitterness that lingers like a memory of blue cheese.

Gently warmed until luxuriously yielding, we serve it with acacia honey, sweet persimmon, and salt-roasted almonds. Together, they reveal a cheese so beautifully sublime.
