在品鉴五粮液时,可先闻到浓郁的热带果香,特别是黄梨,入口则有着绵甜、细腻的果香与粮香交织,再加上持久的回甘,让它不仅适合单独品饮,更能在配搭精致佳肴时,提升整体风味层次。此次“联兴餐饮”携手“Caffeinees”举办的五粮液溏心干鲍宴,正是一次将极致佳酿与奢华料理完美结合的味觉体验。

“Caffeinees”创始人张懿在餐前就跟媒体说,作为一种高度的烈性酒,五粮液最适合配搭一些口味浓郁、有特色的下酒菜,比如川菜就很好。

所以,前菜部分他就为大家准备了宫保虾球、四川辣子鸡、蒜香黄瓜、醋腌皮蛋、四川麻婆豆腐卜和椒粉熏鸭寿司。这些前菜以川菜风味为主,麻、辣、鲜、香交织,配搭五粮液的果香与粮香,使其辛香感得到平衡,尤其是椒粉熏鸭寿司的烟熏风味,与五粮液的余韵相得益彰。

接着是选用珍贵的花胶熬煮的花胶炖鸡汤,汤体浓郁具有胶质。五粮液的酒体醇厚,带有微妙的甘甜,能与鸡汤的胶质感融合,使口感更为顺滑。

匠心打造美味料理

今天的主角溏心干鲍随后登场。张懿解释,溏心干鲍的制作过程极为繁复,凝聚了厨师们的匠心与耐心。发泡阶段就需耗时3天,期间每日换水,以去除盐分,并去除肠与肝等杂质。接着是选用金华火腿、鸡架、白鸡等作为汤底,文火焖煮24小时,并分成三段进行。每焖煮8小时后,就要让鲍鱼休息冷却,这样鲍鱼才会收缩,并吸收汤底的精华。冷却后再升温,反覆三次做法以吸收汤汁,使鲍鱼达到溏心状态,才会入口弹嫩,风味浓郁。

干鲍采用日式菠菜作为佐餐食材,配搭煎过且焖浸鲍鱼汁的金蚝,使整体味道更为鲜甜浓郁。

最后的是蟹黄捞面,它的鲜甜则与五粮液的微妙辛香相呼应,使整道菜的口感更为立体。

五粮液不仅仅是一款经典白酒,更是一种文化的象征。此次五粮液溏心干鲍宴,通过精准的美食配搭,让人们深刻体会到白酒在高级餐饮中的无限可能。从前菜的辛香,到汤品的醇厚,再到主菜的层次递进,五粮液的香气始终贯穿其中,让每一道菜肴都更显精致与深度。
