Another menu has just flown by, a menu that we are extremely proud of. A menu filled with a flood of emotions. Balik Kampung was a distinct memory paying tribute to Jonny’s late grandmother, who was a force of nature in the kitchen, and quite frankly Jonny’s earliest education in the kitchen.
Patin Mask Lemak -
Temerloh Wild caught Red Tail Catfish, slightly brined, smoked and duck fat glazed before a slight torch to finish, dehydrated Pineapple, Chive flowers & burnt Chili Padi kampung, served on a bed of slow roasted Sengkuang finished with a Beurre Blanc & Daun Pegaga Oil.
2. Bubur Lambuk SSS
Biodynamic Rice cooked in a decadent Fish stock, topped off with Salted Duck Egg Yolk, Chick Skin, Chives and Spring Onion Oil
