Another recipe of Pesto-licious other than spaghetti & pizza.
Baked Chicken Roll with Pesto
Ingredients
- Boneless chicken chops
- Pesto-licious
- Your choice of vegetables (e.g., bell peppers, zucchini, cherry tomatoes, or asparagus)
- Fresh basil leaves (optional)
- Salt and pepper to taste
- Olive oil for drizzling
- Kitchen twine for tying
Instructions
1. **Preheat Oven**: Preheat your oven to 180°C (350°F). Lightly grease a baking dish with olive oil.
2. **Prepare Chicken**: Using a meat mallet to pound the chicken to an even thickness. Season both sides of the chicken lightly with salt and pepper.
3. **Add Pesto**: Spread a generous tablespoon of pesto evenly over each chicken chop. If desired, add a few pieces of fresh basil leaves for extra flavor.
4. **Roll the Chicken**: Carefully roll up each chicken chop and tie securely with kitchen twine to hold the shape.
5. **Bake Chicken**: Place the chicken rolls in the prepared baking dish. Drizzle a little olive oil over the top. Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through.
6. **Prepare Vegetables**: While the chicken is baking, sauté your choice of vegetables in a skillet with a bit of olive oil, minced garlic, salt, and pepper. Cook until the vegetables are tender and lightly browned.
7. **Serve**: Once the chicken is done, remove it from the oven and let it rest for a few minutes. Carefully remove the kitchen twine and slice the chicken rolls into rounds.
8. **Plate and Enjoy**: Serve the sliced chicken rolls alongside the sautéed vegetables. Garnish with additional fresh basil leaves if desired.
