This savory turnip cake (sometimes called radish) lo bak go🥕 is a very traditional dish often served at dim sum houses🏠 and when I was a kid, it always showed up on the table on Chinese New Year’s Day. As a result, it’s been etched in my mind as a wonderfully delicious tradition‼️

😋Having sampled versions of turnip cake (or lo bak go, as it’s known in Cantonese) at many dim sum restaurants over the years🫣 I’ve come to the conclusion that they can’t be compared to our homemade recipe. The restaurants definitely skimp on the filling ingredients👍 including the star of the dish, the Chinese turnip. Most of what you get is rice flour and starch.

To be fair, I do have to say that adding fewer filling ingredients makes the restaurant versions much smoother–almost like pudding🍮 if you like that consistency. Also, the Chinese turnip is a very pungent vegetable that definitely falls into the love it or hate it category. For better or worse☝️ everyone in the house will know when you’re cooking Chinese turnip🔥

Clean the crayfish by keeping them in a sink filled with salted water for 1️⃣0️⃣ to 2️⃣0️⃣ minutes. Rinse thoroughly under running water. Next, put the crawfish in plenty of ice water for 1️⃣5️⃣ minutes or so to send them to sleep. Drain well right before cooking🥳. (This is a humane way to cook live seafood and it also helps reduce the stress in their flesh while cooking.)

Place a wok or skillet over medium heat until hot🔥, then swirl in the oil. When the oil starts to shimmer, add the Sichuan peppercorns and chili peppers, and stir-fry until fragrant, about 1️⃣5️⃣ seconds. Add the scallions, ginger, and garlic. Turn up the heat and stir fry for 1️⃣ minute😌.

Add the water, soy sauce, sugar, vinegar, and wine. Bring the mixture to a boil, then add the crayfish🦞. Lower the heat to maintain a gentle simmer. Stir and mix until the cooking liquid has reduced and the crawfish are fully cooked through, 4️⃣ to 5️⃣ minutes. Adjust the seasoning with salt and pepper as needed. Serve hot or at room temperature🌡️.

Production method:

🌈Ingredients:
Skin part: 80g glutinous rice flour, 15g cornstarch, 130g milk tea (slightly sweet), 10g butter
Filling part: 200g whipped cream, 15g sugar, appropriate amount of pearls

🌈How to do it:
1⃣️Pour 25g of milk tea bags into the cup, add 150ml of water to brew at a temperature of about 60 degrees, stir the milk tea evenly and set aside.

Hundred diamond lactone: 3g
Soybeans: 150gI
Water: 1050mL

1️⃣150g soybeans, soak for one to two hours in summer (it can be extended in cold weather), soaking can increase the pulp yield
