WHAT IS OUR PREFERRED TEXTURE?

Over the course of experimenting and discovering new ways to improve our Basque Burnt Cheesecake, we realised there are many different texture that many different bakers do.

From really creamy, soft touch in the middle, egg custardy texture - to just straight up cake with flour, cooked thoroughly, hardened texture, we prefer right in the middle.

We’ve made burnt cheesecake to be really creamy and a bit liquids-like in the middle, but we find that just a bit too much for us. We like it to be a bit more thoroughly cook yet very smooth right in the middle. To do this, it requires a delicate balance between a careful temperature alteration with our oven and numerous experimentation.

WHY OUR PHOTOS LOOK SO GOOD?

Of course, it was all the cheesecake’s doing.

Well, wished we could’ve just said that, but in all good reason, it was just the damn EXPENSIVE camera… which is what most of the people might think.

Yet, it is more precisely because he is also a full-time in-house Photographer & Videographer in an advertising firm. With the knowledge and the resources on where might be able to get food props, placement of them in the frame, relying on lighting/natural light, positioning of subjects/cakes, colour gradings, adequate knowledge of camera angles, variety of lenses that allowed us to create such stunning images.

However, besides the fact that he is a photographer, we can assure you that our Tory Burnt Cheesecake taste as good as the pictures look, if not better!

How it all begins. How we started.

Her birthday was coming up. She was craving for Basque Burnt Cheese Cake. He bought one online and didn’t like it. Perhaps it was too cheap for the price he bought for. He decided to make his own in order to impress her. At the same time she invited him to meet her parents.

Now more than ever, he is determined to make an amazing Basque Burnt Cheese Cake. Without an oven at home, he stayed at his office late to work on the Cheese cake. His colleagues was sceptical about it, seeing how he dared to use office equipment for personal use. He was a bitch and didn’t care what they said, because he knew the next day they’d like it when he shared it to everyone in the office.

He shared his Basque burnt cheese cake to all his colleagues, some see it as kindness, some see it as reciprocated, some say it was too salty, some start to realised they are the lab rats. He made & shared for 3 times. He failed 3 times. There wasn’t any nice burnt, he learned what was the problem. It was the Oven in the office.

She told him there’s a nice Convectional Oven at her place. He decided to make the cheesecake on the day that he meet her parents. It was a nerve-racking decision to make.

The day to meet her family had finally come. He greeted her father and mother with a frightened smile, trembling voice and sweats in his hands. He was lucky to have a handful of gifts and cake ingredients to her family so he had something to do and not only his fidgety voice. He was fortunate that her family was understanding, kind and friendly, he had successfully made his first Burnt Cheese Cake right at her place.

She loved it. Her family loved it. He wanted to make it better. Months later, they decided to move out together to have their own place. She wanted to start a small home-based business with what we love to do and that’s where we are now.

We believe in using premium ingredients to bake our basque burnt cheesecake. We use PHILADELPHIA CREAM CHEESE and EMBORG WHIPPING CREAM! ✨
