The Origin of Spicy Mapo Tofu

中國清代🇨🇳,成都北郊有一無名的餐館,店主陳氏,人稱陳大嫂👩,因她臉上有幾顆麻子,又有外號“陳麻婆”。她烹製的豆腐又麻、又辣、又香,獨具風味🔥😋,生意做到遠近聞名。顧客為了區別於其他的燒豆腐,遂稱其為“麻婆豆腐”。至今,此川菜已成為世界馳名的菜品🌟。

In the Qing dynasty of China🇨🇳, there was a nameless restaurant in northern suburb of Chengdu. The restaurateur’s Mrs. Chen👩. There are several pockmarks on her face, accordingly she had a nickname, "Chen Mapo". The tofu she cooked was so tongue-numbing, spicy and delicious🔥😋 with a special favor that her business was well-known. For distinguishing it from other fried tofu, customers called it “Mapo Tofu”. Up to now, this Sichuan cuisine becomes a world-famous dish🌟.

法蘭西多士(French Toast)又稱“西多士”、“西多”,是香港茶餐廳最常見的小吃之一,據說該甜品是由法國傳入的🇫🇷,法文名叫做Pain Perdu,意思是“失去的麵包”🍞,顧名思義,西多士最早出現是法國人們為了盡快處理未吃完的方面包,將麵包抹上用雞蛋🥚和牛奶🥛混合調成的蛋液,在熱牛油鍋裏慢火煎成金黃色,吃的時候配著糖漿或蜂蜜🍯,再加入水果或是霜淇淋,簡單又美味,大人小孩都搶著吃👨‍👩‍👧。

很快成為經典的法式早餐,每個法國主婦都會做。法國西多士最常用的是法棍(Baguette)或是吐司(Toast)。

French Toast is one of the most common snacks served in Hong Kong cafes. It is said to have been introduced from France🇫🇷 by the French name "Pain Perdu", meaning "lost bread"🍞. As the name suggests, it was first introduced in France when people wanted to dispose of uneaten bread as quickly as possible by smearing it with a mixture of eggs🥚 and milk🥛 and frying it in a hot buttered pan until it was golden brown. It was served with syrup or honey🍯, and fruit or soft-served ice cream, which can be easy to made and delicious for both children and adults👨‍👩‍👧.

It has quickly become a classic French breakfast that every French housewife can make.

The origins of French Toast

說到西多士的起源⏳,最早可以追溯到西元4、5世紀的古羅馬帝國🧐,當時的食譜上有記載:將麵包去皮,切成小塊🔪,蘸牛奶後油炸,塗蜂蜜食用,唯一的差別就是沒有雞蛋,但已經基本可以看到現代西多士的雛形了🍴。

The origins of French Toast⏳ can be traced back to the ancient Roman Empire in the 4th or 5th century AD🧐, when it was written in recipes that the bread was peeled, cut into small pieces🔪, dipped in milk, fried and served with honey. The only difference is the absence of egg, but the prototype of modern French Toast is basically formed back then🍴.

如今我們吃的港式西多士,始於70年代。以花生醬夾心🥜,防止兩塊麵包炸的時候會分開。在炸過之後,和糖漿、煉乳、牛油配著吃,近年來西多士麵包中間的餡料也愈加豐富。從“失去的麵包”,變成在世界各地越來越受歡迎的麵包🌏😍!

The Hong Kong-style French Toast we eat today started in the 70s. It is sandwiched with peanut butter🥜 to prevent the two pieces of bread from separating when they are fried. After frying, it is served with syrup, condensed milk and butter. In recent years the fillings in French Toast have been enriched, and it has developed from the "lost bread" to an increasingly popular bread around the world🌏😍!

香港人愛吃的糖醋咕嚕肉,又稱「古老肉」,始於清朝🕰,當時廣州的外國人很喜歡吃糖醋排骨,但飲食習慣不愛吐骨,廣東師傅便將去骨的肉加入調味料及澱粉,入油鍋炸至酥脆🥘,黏上糖醋鹵汁,結果大受歡迎!👍不過「老外」發音不准確,將「古老肉」叫做「咕嚕肉」,故名稱被用至今🗣。
Local people of Hong Kong loves sweet and sour pork, which is also called 「Gulao Pork」. It was created in Qing Dynasty🕰 when the foreigners in Guangzhou loved sweet and sour spare ribs very much, but they didn’t have the habit to split bones, then cooks in Guangdong added seasonings and starch to the pork without bones, fried them in the deep fryer until it became crisp🥘, added sweet and sour marinade. It turned out that it was very popular!👍 But the pronounciation of foreigners was incorrect, calling 「Sweet and Sour Pork」in cantonese instead of「Gulao Pork」. Therefore, its name is used till now.🗣

《福建海鮮炒飯》為什麼在福建找不到👀?
Why can't we find“Seafood Fired Rice in Hokkien Style”in Hokkien👀?

這道在港式餐廳出現頻率極高的福建炒飯的原名其實是“福州炒飯”,也叫福州海鮮炒飯,它是屬於鮮汁系炒飯。由於福州盛產海鮮🦐🐟,於是當地人就發明了這種用海鮮製作的特色炒飯🍚。因為福建炒飯在當地是家家都會的簡單炒飯‍‍‍ ,太大眾化了,當地人去外面吃飯根本不會點這樣的炒飯,自然也不會有飯店去經營福建炒飯了🙅。
The popular “Seafood Fired Rice in Hokkien Style” in Hong Kong restaurants actually has its old name, that is "Fried Rice in Fuzhou Style". As Hokkien boasts seafood🦐🐟, the local people created this characteristic fried rice made of seafood🍚. Therefore, its simplicity and great popularity among local households have made it unnecessary to go out to eat such fried rice🙅, leading to the scarcity of Hokkien Fried Rice in local restaurants.

福建炒飯大約誕生於上世紀八十年代,福州人把“福州炒飯”帶到了香港🇭🇰。最早見於香港的酒樓和食肆,後來,香港人又融入了很多香港本地的口味進去,成為自成一派的港式美味。
“Seafood Fired Rice in Hokkien Style” was brought to Hong Kong by Hokkien local people in around 1980s🇭🇰. It could be firstly found in restaurants of Hong Kong, and later with the integration with Hong Kong’s unique flavor, it developed as the characteristic delicious food in Hong Kong style.

“Yeung Chow Fried Rice”is actually called“Yeung Chow Pot Rice”🤔?

揚州炒飯雖然以「揚州」為名,卻非源於華東地區的揚州,而是一種道地的粵式炒飯🍚。
揚州炒飯起源於清朝光緒年間的廣州,當年有一家名為“聚春園”的淮揚菜館,老闆自創以蝦仁🦐、廣東叉燒🐷和海參製作出一道名為「揚州鍋巴」的食物。其後有酒樓將鍋巴改為炒飯,命名揚州炒飯,大受歡迎👍,其後在香港發揚光大,並由華人移民把這道粵式炒飯帶到世界各地。
Although Yeung Chow Fried Rice is famous for“Yeung Chow”. However, it does not originate from Yeung Chow in East China, but is a kind of authentic Cantonese style fried rice🍚.
“Yeung Chow Fried Rice”originated in Guangzhou during the Guangxu period of the Qing Dynasty. Back then, there was a Huaiyang cuisine restaurant called “Ju Chun Yuan”, where the owner created a food called “Yeung Chow Pot Rice” with shrimp🦐, Cantonese barbecue pork🐷 and sea cucumber. Later, one restaurant changed the name from pot rice to fried rice and named it“Yeung Chow Fried Rice”, which gradually became popular in Hong Kong👍.

當代粵菜中,以蝦仁及叉燒材料製作的菜式均以“揚州”為名,如“揚州炒麵”和“揚州炒蛋”等,當然它們並不及揚州炒飯般知名了。
In contemporary Cantonese cuisine, dishes made with shrimp and barbecued pork are usually named“Yeung Chow”, such as“Yeung Chow Fried Noodles”and“Yeung Chow Fried Eggs”, but of course they are not as well known as Yangzhou Fried Rice .

香港很多經典美食的名字都帶有地方名稱🗣,卻並非源於當地🙅。例如“京都排骨”、“星洲炒米”、“福建海鮮炒飯”、“揚州炒飯”,它們背後都有著跟美食文化有關的有趣故事🎞。太子小編將會分上下兩集,與大家一起尋找它們的起源👀🗺。

There are many classic dishes in Hong Kong that carry local names🗣, yet not originating from the region🙅, they all have interesting stories behind that are related to culture🎞. We will spend the next two episodes with you to find their origin👀🗺.

《京都排骨》跟京都、北京有什麼關係?
What is the connection between “Peking Pork Chop” and Kyoto and Beijing?

港式小炒名菜“京都排骨”🐷,味道酸甜,這稱謂主要來自於港台及在海外華人地區。
有人會因為「京都」二字,以為此菜式與日本京都有關🎎,其實“京都”這兩個中文字只泛指都城,而不必然是日本的京都,或者中國北京🇨🇳。
另外,北京菜系並不以糖醋做法烹調,北京人更不會以“京都排骨”自稱自己的排骨,北京菜多直接以“北京”冠名,如“北京烤鴨”。
“京都排骨”真正是起源於江浙菜系的無錫,隨華人流行至世界各地,並成為華人知名菜肴之一。

Hong Kong-style “Peking Pork Chop”🐷 with sweet and sour taste, this title mainly from Hong Kong and Taiwan and in overseas Chinese regions.
Some people may think that this dish is related to Kyoto, Japan🎎 because of the word“京都”. In fact, the two Chinese words“京都”only refer to the capital city in general, not necessarily to Kyoto, Japan, or Beijing, China🇨🇳.
The correct origin of "Peking Pork Chop" was from Wuxi, Jiangzhe Recipes, which became one of the famous Chinese cuisines and popular with Chinese people all over the world.

《星洲炒米》並非源自新加坡🇸🇬?
“Fried Rice Noodle Singapore Style” did not originate from Singapore🇸🇬?

星洲炒米是香港及海外唐人街的常見美食,可在酒樓茶市及茶餐廳吃到。
“Fried Rice Noodle Singapore Style”is a common food in Hong Kong and overseas Chinatown.

很多人都以為源自新加坡,其實星州炒米是來自新加坡旁邊的馬來西亞🇲🇾。話說當年吉隆玻有一家大排檔,檔主收工之前用當天餘下的材料碎米粉、叉燒、芽菜、米、雞蛋與辣椒炒給客人吃🥢。結果客人讚不絕口🤤,並問一檔主這碟炒米粉的名字。檔主急智之下就用上“星洲”二字,星州炒米從此誕生,並傳到香港發揚光大。馬來西亞的星洲炒米使用番茄醬和辣椒醬調味;港版的星洲炒米使用咖喱、黃薑和青椒,各有特色。
Many people think that it is from Singapore, but in fact it comes from Malaysia🇲🇾 next to Singapore. It is said that there was a stall in Kuala Lumpur in those days, the stall owner used the remaining ingredients of the day, rice noodles, barbecued pork, sprouts, rice, eggs and chili peppers to stir-fry for the customers before closing🥢. As a result, the customer was full of praise🤤 and asked a stall owner the name of this dish of fried rice noodles.The stall owner used the word “Singapore” in a hurry, therefore, “Fried Rice Noodle Singapore Style” was born and spread to Hong Kong to flourish.

The word “XO” is short for“Extra Old”. Hong Kong people like drinking aged high-end French Brandy “XO”🥃. Therefore, when high-end restaurants in Hong Kong launched the sauce as excellent as XO, it was named after XO sauce.
