Despite its humble appearance, Kodop carries a deep earthy aroma and a surprisingly meaty texture that many compare to chicken.

For this course, rehydrated Kodop is gently sautรฉed in butter before being incorporated into a delicate chawanmushi. Smooth, savoury, and quietly complex. a taste of Sabah's forests, expressed through Japanese craftsmanship.
