这道砂锅鱼头，是师傅做了三十年的手艺，也是店里私房菜系列里很有代表的一道。

每天的鱼，都是从港口新鲜拿货，讲究的就是一个“鲜”字。鱼头下锅前处理得干干净净，火候一步都不能错，慢慢煲出那一锅浓郁的汤底。上桌的时候还在咕噜咕噜冒热气，香味一出来，整桌人都坐不住。

鱼肉嫩滑入味，没有一点腥味，吸满了汤汁的精华，每一口都是鲜甜。配上砂锅锁住的热气和香气，越吃越有味道，越吃越暖胃。

做这道菜不只是手艺，更是耐心和经验的积累。三十年的功底，不是花里胡哨，而是把简单的食材做到最好。

有时候，一锅用心做出来的鱼头，比什么都来得实在。吃过一次，你就会记住这个味道。
