In the early summer days of 2010, “Coffee Academy and Roasting Studio” was first founded on Haven Street, Causeway Bay, dedicated to technical exchanges and sharing idealism for the coffee industry. Located in a charming 1950s architecture, it was a unique space for like-minded coffee aficionados. We attracted the young and the experienced, the curious and the passionate from different parts of the world to movie nights, art jams, photography classes, leather-making… all over a cup of coffee.

This became the birthplace of “The Coffee Academïcs” in 2012, a platform gathering people, minds, and passions together by way of specialty coffee. Our flagship, located at 38 Yiu Wa Street, Causeway Bay, is a unique sensory playground for the avid coffee connoisseur.

Our retail spaces are sanctuaries for those seeking shelter from the metropolitan cacophony of the cities we are located in and those seeking a bohemian oasis amidst the scent of coffee. This beautiful assemblage is a fine collection of individually-designed coffeehouses, each uniquely fashioned to assimilate into their neighbourhood.

A rich cup of coffee is one of life’s little pleasures, but it will become more difficult and expensive to obtain in the near future. Coffee is among the crops under threat from climate change. An extensive study published in January found that 60% of wild coffee species — or 75 of 124 plants — are at risk of extinction.

Global warming, deforestation, disease and pests are contributing to the decline, and scientists warn that without conservation, monitoring and seed preservation measures, one of the world’s most popular drinks could become a thing of the past. Beyond the environmental implications, coffee is a $70-billion-a-year industry that is supplied mostly by small-scale farms in parts of Africa and Latin America. Not only is the supply chain in danger, but so are the livelihoods of the estimated 25 million farmers who sustain themselves by growing coffee.

Experts explain how worldwide coffee production is threatened by climate change and what the industry is doing about it.…Read More

Hey coffee lovers! I thought it would be lovely to round out my coffee tutorials today with my first love. The place where my coffee-making journey began. The method I still use at least once a week, especially when pressed (get it?) for time.

Oui.

I’m talking about French press coffee.

I’ve actually had my trusty ol’ Bodum French press (pictured above) for going on 10+ years now. And let me tell you, it has literally served me well. I have made literally thousands of cups of coffee with it over the years. But while they were good from the start, I have to say that they have gotten better over the years as I have learned even more tips and tricks for making a stellar cup of French press coffee. So if you’re looking to kick up your brew, hopefully this tutorial can provide a few new pointers. And if you’re brand new to coffee brewing, French press is a perfect place to start.

What Is the History of Coffee?
An old legend states that coffee was first discovered in Ethiopia in AD 850 by a herdsman named Kaldi. While in his field one day, he caught sight of his goats acting excitedly near a bush. Upon further observation, he found the goats eating what appeared to be red berries (coffee cherries).

Kaldi also ate the berries. After experiencing a similar feeling of elation and energy, he brought the berries to local monks. They came up with the idea of drying and boiling the cherries to make a beverage, hence the birth of coffee.

Swedish egg coffee is a unique way of brewing coffee with an egg. According to legend, this recipe originated en route from Sweden to America in the late 1800s. It has become a long tradition for Lutheran church gatherings of Scandinavian-Americans in the Midwest and was dubbed "church basement coffee" for the large quantity it usually makes. To make Swedish egg coffee, a raw egg is added to the coffee grounds before brewing the coffee, creating a potting soil-like mixture. Some diehard egg coffee lovers use the crushed eggshell as well, but that's optional.

The earthy, caffeine-infused coffee drink may hold more power than waking you up in the morning.

Drinking either sweetened or unsweetened coffee is associated with a lower death risk compared with not drinking the beverage, according to a new study published in the journal Annals of Internal Medicine.
Researchers surveyed 171,616 participants in the United Kingdom up to five times over the course of a year about their lifestyle, including their coffee-drinking habits. The scientists then looked up death certificates to see who had passed away an average of seven years later.
The participants ranged in age from 37 to 73 years old and reported they had no cardiovascular disease or cancer at the time of the survey.
Results showed that for people who drank a moderate amount of coffee, defined as 1.5 to 3.5 cups a day, those who sweetened their coffee had about a 30% lower death risk compared with non-coffee drinkers, according to Dr. Christina Wee, associate professor of medicine at Harvard Medical School, who was not involved in the study. She is also deputy editor of the Annals of Internal Medicine.

Depending on how you prefer your coffee, you could have a lower death risk compared to non-coffee drinkers.
